Ham, Bean, and Tomato Soup

Just in case you needed a reason to make a delicious soup today, It’s National Soup Day! It’s freezing and snowing here today, so that’s even more reason to enjoy a delicious bowl of hearty soup.  I love how filling soup can be and how it can heat your entire body up in minutes.  What I love even more is that soups are incredibly easy to make and almost foul proof no matter what veggies you add to them. And one more reason they win — You can often make crockpot soup for even less time on your hands – set it and forget it!

Growing up my mom always made bean soup in her slow cooker and I refused to eat it.  I mean, beans! GROSS!  For some reason (I can’t remember) a few years ago, I tried a soup that had beans in it and I was in love.  Last year, I attempted to make it on my own and it was absolutely delicious.  Since then, it’s been one of my go to soups to make because it’s incredibly inexpensive.

Ingredients: 
Bone-in Sliced ham, 1-2lbs, cubed
1 package 16 bean soup (throw away seasoning packet or use for something else)
28oz can organic diced tomatoes, juice included
1 medium red onion, diced
2 large carrots, diced
6 cloves garlic, minced
1/2 tbsp cumin
1 tbsp Italian seasoning 
1/2 tbsp smoked paprika 
3 bay leaves
4 cups low sodium chicken broth (bone broth preferred if you make your own)
4 cups water
 
Directions: 
Add all ingredients into your crockpot and stir until very well combined.  Set your crockpot to low for 6-8 hours or on high for 3-4 hours.  Stir again, adding 1-2 cups more liquid if too much has evaporated. Remove bay leaves and bone piece before serving. Serve and enjoy.
Cook’s note: If you are home, I try to stir this every 2-3 hours, but it’s not necessary.
