The add-in possibilities are pretty endless, but in addition to the sausage, egg, and cheese, we did potatoes, red and green peppers, mushrooms, and spinach. Onions, garlic, bacon, would all be great options.
Like I said in the beginning, Skibbles ate it up! She absolutely loves this stuff! It was great knowing that she was getting so many amazing foods in one meal. We had this for dinner when I made it the first time, but I’m actually making this again this morning!
Ingredients:
1/2 lb breakfast sausage (fresh from market is best)
4 potatoes, peeled and cubed
4 eggs, beaten
1 cup red pepper, diced (1 large pepper)
1 cup green pepper, diced (1 large pepper)
1/2 cup mushrooms, diced
1 cup spinach, chopped
1/2 teaspoon Ground Pepper
1 teaspoon Italian Herb Seasoning, grinded
1 cup shredded cheddar cheese
*Note: This recipe is enough for 4, but could easily be doubled for a great brunch.
Directions:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add cubed potatoes and cook until golden brown, stirring often, roughly 10 mins. While cooking, add pepper and Italian seasoning. Once golden brown, add in sausage and peppers and stir to combine. Let cook until sausage is browned, stirring occasionally, 10-12 more minutes. Add beaten eggs and stir like you would be scrambling eggs, so they harden up. Add in spinach and mushrooms, combine, and cook another 2-3 minutes until wilted down. Top with cheese and combine and cook until cheese has melted. Serve immediately.
