Simple Shrimp Tacos

Sometimes I wish I just had a food genie that would say “ta-da” tonight for dinner you will have fill in the blank.  It’s just I feel like I run out of ideas or always make the same things and trying to come up with new ideas is hard.  I opened the freezer and saw shrimp, so I thought alfredo.  Then realized I didn’t have the necessities to make the sauce and I didn’t feel like going to the store (yes, lazy day). Then I thought…tacos..
I started by seasoning 3/4lb baby shrimp (pre-cooked) with 1/2 tbsp of Mrs. Dash Garlic & Herb seasoning.  I finely chopped up 1/4 cup red pepper.
Heat a skillet to medium high and cook peppers for 3 minutes.  Add the shrimp and cook just until opaque (3-5 minutes). I used pre-cooked shrimp so don’t cook longer or you will have tough shrimp.
On each tortilla, I spread sour cream, cheese (mix of colby and mozzarella)…
Add the shrimp, lettuce, and salsa.  Roll up and ENJOY!

I’ve made shrimp tacos before and I enjoy them with cilantro, lime, avocado, and even corn sometimes!  With tacos the possibilities are endless!  What are your favorite toppings?

    Delicious! I love shrimp and fish tacos, but the last time I tried to make fish tacos at home, they were really gross. 🙁 I'll have to try this, thank you!
