Spaghetti with Bacon Fried Meatballs + Time for Mom

Yes, you read the title correctly. Bacon fried meatballs. Why? Because, why not? Unless you are vegan or vegetarian, I’m 99.9% sure you love bacon. Heck, vegans even like the thought of bacon, no? In my opinion, it’s one of the main food groups. Yes, I try to eat healthy most of the time, but you won’t get me to give up my bacon.  And frying other things in bacon grease is just the best thing ever. 

There’s really not much to the recipe and honestly I have a hard time even justifying it as a recipe, but it is I suppose. This is one of my go to meals to create for new moms because it’s easy on your budget, it’s quick, and the taste is awesome.

While I’ve put below my basic meatball recipe, if you have a favorite one, feel free to use that.  The most important thing here is the frying of the meatballs in the bacon grease! HA!

 

 

 

Ingredients:
1lb organic pasta, any noodles will work
1 jar favorite spaghetti sauce (this is our favorite ever)
1/2 cup reserve pasta water
4 strips bacon
1 lb ground meat
1/2 cup Parmesan cheese
1/2 tsp organic black pepper
1/4 tsp organic dried basil
2 tbsp low sodium worcestershire sauce

Directions
In a large pot, cook pasta according to box, reserving 1/2 cup pasta water before draining.

Combine ground meat, Parmesan cheese, pepper, basil, and worcestershire sauce until well blended. Roll into one-inch balls. Set aside. Over medium heat, cook 4 strips of bacon until crispy. Set aside until cooled, then crumble. In the same pan the bacon was cooking, Carefully add in meatballs. Cook 2-3 minutes and flip once browned. Continue cooking 2-3 more minutes or until cooked through (165 degrees F).  Remove meatballs and drain off any excess grease. To the cooked pasta noodles, add the reserved pasta water and your sauce and combine very well. Then add meatballs and carefully stir to keep them intact. Add the crumbled bacon on top and serve.
