Spiced Rubbed Pan Seared Salmon

We LOVE Salmon.  LOVE IT!  Including Skibbles, who happily shoves it in her face every time we have it, which is almost weekly.  However, it hasn’t always been easy.  I was never a big fish eater until the last 3-5ish years.  Partly because we never had it growing up unless it was in the form of a frozen, battered stick that either got fried or baked….and partly because based on my mother’s opinion, it tasted disgusting.  Luckily, as I’ve gotten into my adulthood, I’ve started exploring new foods and also overcame my fear of cooking fish as well.
I’m not the best fish cook in the entire world, but I like to think that I’m becoming successful with at least salmon.  My thoughts were authenticated when I sat this meal in front of Andrew and he said that not only did it taste amazing, but tasted better than his mom’s fish.

HOLD ON.  WAIT.  PULL MY CHIN BACK UP TO MY MOUTH.

Better than his mom’s!?!?

I don’t think those words have EVER come out of this mouth.  Okay, maybe one or two other times. But this is epic, so of course I had to share!

It’s also an incredibly easy recipe that doesn’t take a lot of prep or cook work.

I start with a great combination of simple spices, some of which may sound
like it goes together, but I know that the nutmeg may throw some people off.
Just trust me on this one and go with it!

 

Ingredients:
1/2 cup red onion, finely chopped
2 cloves garlic, minced
pinch of salt
1/4 tsp each: black pepper, chili powder, paprika, and freshly grated nutmeg 
4 tablespoons unsalted butter, divided
3-4 salmon fillets 
 
Directions:
Mix the spices together and sprinkle evenly across salmon fillets, let sit for 10 minutes.  In the mean time melt two tablespoons butter over medium high heat in a large skillet.  Add onion and cook for two minutes until it starts to become translucent.  Add in garlic and cook for another two minutes until fragrant.  Add two more tablespoons of butter and melt.  Then, add in the salmon* and cook on each side 3-4 minutes.  Remove and serve.

*Cooks Note: If your salmon has skin, place it skin side up to start cooking). Salmon should reach 145 degrees F to be done.

We hope you enjoy this dinner as much as we do.  We served it paired with a baked potato and fresh broccoli with cheese.
