These Chocolate Chip Popcorn Ice Cream Sandwiches are the must have treat of the summer. Perfectly sweet & fun for everyone no matter your age! A perfect chocolate dessert for summer. 

You’ve never had an ice cream sandwich like this. These Chocolate Chip Popcorn Ice Cream Sandwiches are literally dessert perfection. 

Salty and sweet are the perfect combo, especially when it comes to dessert.  This combo of salty popcorn plus sweet cookies, ice cream and chocolate are literally a match made in heaven.  It may be an unlikely pairing and one you’ve never thought of, however, once you try it, you will wonder why you’ve never tried it before!  

Another reason this is a great reason is that kids will go nuts over making it.  Kids love making popcorn. Whether you make it on the stove or in your microwave, the pops send them in a gigglefit every single time. 

Then, you’re combining popcorn with chocolate, putting ice cream between two cookies, and then putting them all together. 

What ingredients do you need to make Chocolate Chip Popcorn Ice Cream Sandwiches?

  • Popcorn 
  • Vanilla Ice Cream
  • Chocolate bar
  • Chocolate Chip Cookies

That’s it!  These four ingredients are all you need to make these delicious ice cream sandwiches.  They do take a little bit of time to make, but it’s perfect for a fun project once the kids are off school! 

How do you make Chocolate Chip Popcorn Ice Cream Sandwiches?

You’re going to make these in batch processes.  First, you need to make your popcorn according to the instructions.  Depending on if you are making this in a bag or with kernels on the stove will depend on how you make.  You want to choose a non-buttered popcorn to work best for this recipe.

Once you have your popcorn made, you need to reserve approximately 2 cups of the popcorn.  With the remaining amount, feel free to eat it, make a popcorn necklace, or anything else. 

In a microwave safe bowl or double broiler, melt the chocolate bar down.  Dip your cooked popcorn into the chocolate, then place on a wax lined baking sheet. Freeze for 20 minutes. 

Take one large scoop of ice cream and place it between two chocolate chip cookies.  Then, push the chocolate coated popcorn into the sides gently. 

Serve them immediately or place in an air tight container in the freezer until ready to serve.  Good for about 2 months. 

Can I prep these chocolate chip ice cream sandwiches ahead of time?

Absolutely! Make the recipe as directed and instead of immediately serving store in an air tight container in the freezer for up to two months.  Eat one at a time or serve all together.  It’s best to take out 5-10 minutes before serving. 

Can I make these vegan or allergy friendly ice cream sandwiches?

As parents, we are fully aware of food allergies and preferences and are working to make our recipes inclusive for everyone. With that, we are happy to say that you can totally make these vegan or allergy friendly ice cream sandwiches. 

You can purchase or make allergy friendly chocolate chip cookies. As well as purchasing or making non-dairy popcorn. We like to pop our own kernels in a little bit of oil and use from there.  Our go to Top 8 Free chocolate is Enjoy life.  Just melt down 1/2 cup of chips in the same process as using the bar in the original recipe.  And lastly, swap with a non-dairy, allergy safe ice cream. Even a banana nice cream would work, it would just have a banana taste. 

Follow the recipe instructions as written and you’ll have food allergy safe ice cream sandwiches!

Ingredients
  • 2 cups cooked popcorn
  • 1 quart vanilla bean ice cream
  • 4 oz baking chocolate bar
  • 12 chocolate chip cookies
Instructions
  1. Make popcorn according to instructions on bag or container using. Cool.

  2. In a microwave safe bowl or double broiler, melt chocolate bar down.

  3. Dip popcorn into chocolate and place on wax lined baking sheet.
  4. Freeze for at least 20 minutes.
  5. Take one scoop of ice cream and sandwich it between two cookies.

  6. Push popcorn gently into sides of ice cream.

Spring is here and the weather is finally seeming to catch up to that memo. The weather has been gorgeous here this week (even with a few rain showers thrown in). Ingredients
  • 1.5 cups rolled oats
  • 1 cup cashew butter (other nut butters would also work)
  • 3/4 cup unsalted almonds, roughly chopped
  • 1 cup walnuts, roughly chopped
  • 1 cup cashews, roughly chopped
  • 1/3 cup raw honey
  • 1/3 cup unsweetened applesauce
  • 1/3 cup ground flaxseed
  • 1/3 cup dried cranberries
  • 1/3 cup unsweetened cacao powder
  • 4 scoops Amazing Grass® Green Superfood®
Instructions
  1. In a large bowl, mix all the ingredients together until very well combined. 

  2. Line a 13x9 pan with wax paper.

  3. Spread the mixture across the pan and press down ensuring one even layer. 


  4. Freeze for 3 hours or overnight. 

  5. Cut into desired size bars (we do 12). 

  6. Leave in freezer until ready to eat. When ready, remove one at least 30 minutes before wanting to eat.

For years, I wasn’t a huge chocolate fan.  It’s true. I would eat brownies, but chocolate chip cookies or chocolate cake, it wasn’t for me. When Andrew and I got together, he desperately tried to change my mind. See, he lovesssss chocolate.  If he’s in a bad mood, chocolate can usually fix that. I love putting a piece of chocolate in his lunch box when I know he’s having a rough start to the day.  It’s the little things that really matter.

Thankfully, his love of chocolate taught me to appreciate it more. Now, I still don’t have a love obsession with chocolate cake, but cookies, brownies, and other desserts, I’m all in for all the chocolate.

Every Saturday, we make a different cookie for our in-home date night.  It’s something we’ve done for a little over a year now and it’s something we both look forward to at the end of every week. One night, Andrew was in charge of the recipe and he said he was making chocolate cake cookies.  I was so upset.

Ingredients
  • ½ cup unsweetened dark cocoa powder
  • 1 cup cake flour
  • 1½ cup flour
  • 1 teaspoon arrowroot powder cornstarch could be used as a substitute
  • ¾ teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter 2 sticks, cold, cut into pats
  • 1 cup brown sugar packed
  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 1/2 cups chocolate chips milk chocolate used in these photos; however, we've done white, semi-sweet, peanut butter chips, or a combination of a variety of these as well.
Instructions
  1. Preheat oven on 410 degrees F.
  2. In a medium bowl, whisk together cocoa powder, both flours, arrowroot powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugars.
  4. Beat in eggs 1 at a time just until mixed in.
  5. Add vanilla and mix just until blended.
  6. Add all dry ingredient mixture and stop as soon as it's combined.
  7. Fold in chocolate chips.
  8. Line baking sheet with parchment paper.
  9. Roll mixture into 12 large balls.
  10. Cook for 8-12 minutes or until set.
  11. Remove and let cool for 5 minutes.
  12. Serve immediately or store in an air-tight container for up to 7 days.

For some reason, I’ve always loved salty and sweet treats.  They are the perfect treat to me. I’m always looking for a new way to combine my favorite flavors together and I think these salted caramel chocolate streusel bars take the cake. The salted flavor comes in the form of both caramel and crushed pretzels. The sweet flavor emerges with chocolate, chocolate, and more chocolate plus sweet milk. A soft creamy center with crunchy pretzels bites, makes this dessert a home run for pleasing all your cravings at once.

These salted caramel chocolate streusel bars are the perfect recipe to take to your next get together. When they were cooking, the smell that happened inside our house was amazing.  You know how something is cooking and you just can’t wait until it’s done because you have to try it.  That’s what happened here. I was sitting in front of the oven, watching the timer count down, and begging time to fly by. Luckily, this sweet treat was highly satisfying. Ingredients
For Bars
  • 1/2 tbsp coconut oil
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/4 cup sweetened cocoa powder
  • 1/2 cup unsalted butter diced
  • 1 egg
  • 1 14 oz can sweetened condensed milk
  • 1 1/2 cup Semi-Sweet Chocolate Chips divided
  • 1/2 cup White Chocolate Chips divided
  • 1 1/4 cup coarsely chopped pretzels divided
For Caramel
  • 1 cup brown sugar
  • 5 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1 tbsp vanilla
  • pinch of salt
Instructions
  1. Heat oven to 350°F.
  2. Grease 13x9 pan with coconut oil. Set aside
  3. In a large bowl, whisk together flour, sugar and cocoa in large bowl.
  4. Add in butter and using your hands or a pastry cutter, combine until mixture resembles coarse crumbs like a streusel topping.
  5. Add egg and mix until well combined.
  6. Reserve 1 cup of the chocolate mixture.
  7. Press firmly the remaining chocolate mixture onto bottom of prepared pan, ensuring an even layer.
  8. Bake 10 minutes.
  9. While that is baking, in a medium sauce pot over medium heat, add all the ingredients for caramel except vanilla.
  10. Stir until butter has melted. Then, reduced heat to medium low and let cook, unstirred for 5 minutes (it will bubble but do not stir-if getting close to the top reduce heat).
  11. While you are waiting for the caramel to finish, place 1 cup semi-sweet chocolate chips and sweetened condensed milk inside a microwave safe bowl.
  12. Microwave for one minute, then stir.
  13. If needed, Continue at 15 second intervals until chips are melted and mixture is smooth.
  14. Remove caramel from stove and stir in vanilla. Reserve 1/3 cup caramel.
  15. Remove pan from oven.
  16. Pour caramel over crust and spread to make even.
  17. Add 1/4 cup semi-sweet chocolate chips, 1/4 cup white chocolate chips, and 1/2 chopped pretzels on top of caramel.
  18. Pour chocolate and sweet milk mixture next and gently spread evenly.
  19. In a small bowl, combine the reserved crumb mixture, remaining semi-sweet and white chocolate chips, and remaining pretzels together.
  20. Evenly sprinkle over the top of the bars.
  21. Drizzle remaining caramel on top.
  22. Bake for an additional 28-33 minutes or until center is almost set.
  23. Cool completely and cut into bars.

Growing up, hot chocolate was such a special treat for us.  We didn’t get it often, but it was such a fun drink as a little kid.  I mean, my mom was agreeing to let me drink chocolate. However, her hot chocolate always came out of a paper packet and needed to be mixed with warm water or milk. Her version of homemade hot chocolate was anything but homemade. As a child, that didn’t matter.  As an adult, I have become a bit of a hot chocolate snob.

I remember the first time I had real hot chocolate not made from a packet. It was like a new awakening. Anytime I’ve had a packet of hot chocolate since then, it just isn’t the same.  Fast forward, and Andrew and I love to have hot chocolate dates.  One of our favorite things is this rich, indulgent homemade hot chocolate recipe. It’s what your homemade hot chocolate dreams are made of, I promise.

How Do you make a real hot chocolate recipe?

First, start by caramelizing sugar. Then, warm milk in a pot until bubbling (but not boiling). Next, add in real chocolate bars and and heavy cream until melted.  Finally, you add a splash of vanilla at the end.

The end result is the most decadent, rich, creamy homemade hot chocolate recipe you’ve ever had.

How do you make thick hot chocolate?

The key to indulgently thick hot chocolate is to use real chocolate bars instead of a cocoa powder and to use heavy cream.  Both of these things together leave you with a thick hot chocolate recipe that is satisfying without the use of flour or cornstarch that you may have seen in other recipes.

Ingredients
  • 4.4 oz 70% Cacao Chocolate Bar
  • 1.4 oz 50% Cacao Chocolate Bar
  • 2 tbsp sugar
  • 1 1/2 cups whole milk
  • 1 1/2 cups heavy cream
  • 1/2 tsp vanilla
  • homemade whipped topping
Instructions
  1. Roughly chop chocolate.
  2. In a heavy bottom sauce pan, add sugar and turn heat on medium low.
  3. Wait until sugar starts to caramelize, the edges will turn a rich amber color. Once all edges are this color, carefully stir.
  4. Whisk in milk.
  5. Constantly whisk for 2 minutes.
  6. Pour in heavy cream and chocolate and stir until combined and chocolate has melted.
  7. Let cook another 2 minutes until it becomes thick and creamy.
  8. Remove from heat and add vanilla.
  9. Serve immediately with homemade whipped topping
  10. *NOTE: Do not boil the milk. Small bubbles are okay, but boiling will scorch and burn your milk and then it's no longer yummy.

Chocolate Peanut Butter No Bake Cookies.

Chocolate plus peanut butter has to be one of our household’s favorite combinations.  Especially, our girls. The girls have been asking to make cookies recently, but I didn’t feel like baking them. Then, I remembered a no bake recipe I’ve made in the past.  Taking one bite of these chocolate peanut butter no bake cookies will leave your mouth full of deliciousness. The fact that kids can make these pretty much on their own is another added bonus. I’m constantly looking for ideas to let the girls explore in the kitchen and expand, not only their taste buds, but their love of cooking and enjoying treats that are healthy for them.

These no bake cookies are packed full of protein, so they are the perfect treat for high energy summer days where your kids have been going full steam.

I know, for us, many summer days are spent swimming for hours on end, which means they need to have energy to keep up. These chocolate peanut butter no bake cookies do just that. I’m also hoping to get out more this summer and explore some hiking trails and lakes local to us. That’s something we have never done but I’m really excited to try it as a family. We recently found a local park that allows you to rent canoes, so we would really like to do that too. I’ll be making sure that I pack some of these treats with us for whatever we do this summer!

This recipe is super simple.  It’s just eight ingredients and while a stove is involved, it’s still just a little help needed on your own. You can make them as thick or thin as you want. In a time crunch, throw them in the fridge to harden faster. Keep in fridge to up to 5 days in air tight containers.

Chocolate Peanut Butter No Bake Cookies

Ingredients
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 stick butter
  • 3 cups oats
  • 1 cup PB
  • 2 tsp vanilla
  • chocolate chips
Instructions
  1. Line sheet with wax paper.
  2. heat sugar, milk, butter and honey until butter is melted. Boil for 90 seconds.
  3. Add in PB, oats, and vanilla.
  4. Fold in chips and cranberries
  5. Using spoon, drop cookies onto prepared baking sheets. Flatten to round cookies
  6. Set 30 mins before serving.
  7. Air tight container for 3 days

S’mores Waffles

The first day of school is a really big deal.  Whether you homeschool or send your child out of the home for school, the first day is always super important.  Not only to us as parents, but most importantly to the children themselves. When we thought we were going to start Pre-K homeschool last year, I wanted to start our first day off amazing. What better way to do that than with a super amazing, fun, and delicious breakfast.

While Pre-K homeschool didn’t work out for us last year (Skibbles just wasn’t ready), we think she will be this year. We have started prepping our homeschool room and I’ve started planning out our first few weeks of materials. But what I was most excited about was when I thought of this genius first day of school breakfast. S’mores Waffles! I don’t know many kids that wouldn’t enjoy this for their first day breakfast, or any day breakfast if we are being truthful here.

I promise you read that right. We made S’mores Waffles.

We cooked golden delicious Belgian style waffles, cut them almost all the way apart, then stuffed with chocolate chips and mini marshmallows. Snack style you can eat them just like that. Or, top with crushed chocolate graham crackers and maple syrup. WHATTT!? S’mores Waffles are the bomb.com y’all. These need to be on your must make list.

Both girls went crazy over them, but admittedly, so did Andrew and I. This was definitely a fun back to school Mini Chef Mondays recipe to prepare for you all.

Now, I’m faced with the truth that we are giving Pre-K homeschool another go around.  This time more focused with a ready to learn pre-schooler this year.  The mama in me just wants to go hide in a corner and cry.  Why is she about to turn 4 guys? FOUR!?  I feel like I just had her. But she’s growing into this fiercely fun, crazy, independent, and intelligent child, and I couldn’t be more proud of that.

Okay, let me stop being such a mom. Here’s the recipe your dying to have!

S’mores Waffles

Ingredients
  • 6 eggs
  • 1/3 cup coconut oil melted
  • 1 cup whole milk
  • 1 tbsp brown sugar
  • 1 tbsp sugar
  • 2 tbsp all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • mini marshmallows
  • chocolate chips
  • chocolate graham crackers crumbled (optional)
  • maple syrup
Instructions
  1. In a large bowl, whisk together the eggs, coconut oil, milk, and both sugars.
  2. In a separate small bowl, combine, flour, salt, and baking powder.
  3. Slowly combine, dry ingredients into wet ingredients.
  4. Cook batter according to your waffle maker.
  5. Once down, carefully slice waffles almost all the way through.
  6. Stuff with desired amount of mini marshmallows and chocolate chips.
  7. Put back into waffle maker to melt, about 15-20 seconds.
  8. Eat as is for a snack or top with crumbled chocolate graham crackers and maple syrup for breakfast.

Smores Chocolate Chip Cookies

Over the weekend, Skibbles, our toddler, was begging to go outside.  Unfortunately, it was raining again. I don’t think we saw the sun for at least seven straight days. I always heard the phrase, “April showers brings May flowers”, yet it always seems to rain a ton in May. Anyway, I ended up building her a fort with the chairs in our living room and it got me thinking about once she’s older it would be fun to take the girls camping in our backyard.  Now, I say our backyard because I don’t think I can do wilderness camping out in the middle of nowhere.  I need access to the actual bathroom and the ability to escape in case I hear some funky noises out there.

I’ve actually never been camping of any sort, so I started talking to Larisha about things that people do when they go camping and she told me about a time when her class in elementary school went on a school camping trip.  They had this group scavenger hunt through the woods, swam in a river, and more, but the most fun thing she told me about was cooking all the food.

She explained how there was this huge bonfire and they found sticks in the woods and cooked hotdogs and made s’mores. It’s definitely something that I wished that I would have had the opportunity to experience growing up, but made me think that it’s going to be even more enjoyable being able to experience it with my girls instead.

Since we weren’t able to go outside because of the rain, I decided to take the outside inside for the recipe this week.  Larisha loves my homemade chocolate chip cookie recipe that I’ve been working on for awhile now and I decided to kick it up a notch and make these homemade Smores Chocolate Chip Cookies.  Larisha and I were both impressed with just how amazing they turned out.  They are definitely going to be our go to recipe to take to get togethers now, especially in the summer.

The dough is not like your typical chocolate chip cookie dough recipe.  This is a thick and dense dough batter so that the fudge sauce and marshmallows stay inside properly. The end results are these thick, yet soft and amazing cookies bursting with chocolate sauce and melted marshmallows.  Just the things that get you excited about eating S’mores in the summer.

Smores Chocolate Chip Cookies

Ingredients
  • 4 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter slightly melted (30 seconds in microwave)
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 2 egg
  • 1 cup chocolate chip chunks
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 120 mini marshmallows 1/2 of standard size bag
For fudge sauce
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 2 tbsp unsalted butter
  • 1/2 tsp vanilla
  • 10 oz semi-sweet chocolate chips
Instructions
  1. Make fudge sauce. Set aside until ready to use.
  2. Preheat oven to 350 degrees.
  3. In a small bowl, mix together the flour, salt, and baking soda. Set aside.
  4. In a large bowl, mix together butter, white and brown sugars, and vanilla on low speed.
  5. Add eggs in ones at a time.
  6. Slowly add the flour mixture to the bowl. *You will have to mix some by hand as this is thick dough.
  7. Add in the chips until combined.
  8. Roll the dough out into 3in balls.
  9. Flatten the balls and add 4 mini marshmallows and a tsp of fudge sauce.
  10. Fold up and bake for 11-15 minutes or until golden brown.
  11. Remove and let cool on baking rack.
