Summertime is right around the corner. (YAYYY!!!) You can almost taste the salt in the air as we get closer to being able to take beach trips. We had a few days of summer-like weather last week and I must admit that we were so excited.  The kids happily ran around and played in the hose and at the playground everyday. The girls were excited to plant seeds for new flowers all over the flower beds and start working in our vegetable garden. Cheesy Corn Pizza with Bacon and Scallions

Ingredients
  • 1 pound whole wheat pizza dough we used our homemade dough -see below
  • 1-1/4 cups Sunshine Sweet corn kernels
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil divided
  • 2 large garlic cloves minced and divided
  • 8 ounces mozzarella cheese thinly sliced
  • 8 slices bacon cooked and crumbled
  • 1/3 cup thinly sliced scallions
  • 1/4 teaspoon black pepper
Instructions
  1. Make dough according to directions or packaging.
  2. In a blender or food processor combine corn, parmesan cheese, salt, 1 tablespoon of the oil and half of the garlic; blend until almost smooth.
  3. In a small bowl combine remaining oil and garlic.
  4. Heat oven to 400⁰F; adjust rack to lower third of the oven.
  5. Brush a large baking sheet or pizza pan with a little of the garlic oil.
  6. Press the dough into a large flat disk or square and place on the prepared pan.
  7. Press the dough out to an even thickness leaving a lip around the border.
  8. Brush dough all over with the garlic oil.
  9. Cook for 8 minutes.
  10. Remove from oven and top with corn mixture, mozzarella, bacon, scallions and pepper.
  11. Return to oven and bake until crust is golden brown and cheese is melted, 15 to 20 minutes.

As a parent, you know that pizza can pretty much solve all of life’s problems for yourself and your child.  Upset teen? Give them pizza.  Overstimulated toddler? Make a pizza. Tween in a rush to get to sports after school…PIZZA!  There has been numerous times for all parents where pizza has come to the rescue for us. Most families make or order pizza on a consistent basis. Growing up for me, that was Friday nights and we’ve traditionally followed the same now that Andrew and I are parents as well.

If you’ve been following us for any extended amount of time, you know that we frequently use our homemade pizza dough recipe pretty much all the time. It takes five minutes or less to stir together and we’ve gotten it down to a science in perfection.  With just 5 ingredients, we want all families to know how easy it is to make your own pizza dough at home. It’s also a great experience for kids to learn as well.

Skibbles enjoys making pizza dough from start to finish. Measuring, pouring, and stirring all the ingredients together and then after letting it rise, she loves kneading it out. At almost four, she naturally needs a little help, but giving the ingredients are so cheap to make, I never have to worry about her messing up. Quite honestly, sometimes she even comes up with some pretty neat ideas too that we have slated to share with you in the future.

Today, however, I was searching for something to share that was easy, freezeable, and would be a huge hit with everyone as back to school time has hit again. I channeled a previous recipe, our Popable Pizza Bites, and decided to make these Ham and Cheese Bites. Not only are these insanely easy to make, but you can freeze them, either before or after cooking.  I always prefer to freeze them after cooking, that way you can just pop them in the microwave to reheat, rather than having to wait for them to cook.

Ham and Cheese Bites

Ingredients
  • Pizza Dough Recipe
  • 1 8 oz block of Colby cheese cut into 28 pieces
  • 1 8 oz package of Smoked Deli Ham or favorite deli ham
  • 2 tbsp unsalted butter melted
  • 1 tbsp Italian seasoning
  • 1 tbsp Parmesan cheese
Instructions
  1. Prepare pizza dough according to the directions, letting one half rise, and freezing second half.
  2. *Optional: If you wish to double this recipe, let both halves rise and double amount of ham and cheese above
  3. Roll out dough into 28 equal balls.
  4. Roll each ball into a small circle and add one piece of cheese and approximately 1/2 tbsp of ham.
  5. Fold up edges around filling and place in 13x9 baking dish seam side down.
  6. Repeat until all balls are filled and in baking dish.
  7. Mix seasonings together.
  8. Brush each with melted butter and sprinkle with seasoning.
  9. Cover and freeze overnight (or at least 30 minutes).
  10. Baking: Preheat oven to 350 degrees. Remove cover and place into oven for 12-15 minutes or until golden brown.
  11. Serve along with Honey Mustard BBQ sauce.

Tips:  After freezing overnight (or for 30 minutes), place in a sealed zip bag in freezer until ready to cook, then follow directions. OR cook, then cool, and place in a sealed zip bag in freezer until ready eat. Microwave 30 seconds at a time until cooked through. Cool down and serve.

No matter if you work from home or work outside the home, when it comes to dinner time, none of us really feel like standing for hours over a stove in order to get dinner on the table.  What we do all care about though is providing our families with delicious, healthy, and warm meals, especially when it’s cold outside. During the summer, I’m the first to serve up a salad with grilled chicken or boiled eggs, but during the winter, I really feel obligated to giving our family something that is going to warm them up inside.

I’m hear to tell you that yes, you can, provide a delicious and extremely healthy meal for your family without spending hours in the kitchen and honestly, without breaking the bank either! Both of these are extremely important to us, and I know you care about it too. Making dinner shouldn’t be stressful and that’s why we are giving you this simple spicy veggie pizza recipe to make for your family!

We headed over to our local Wal-mart and found inspiration for this simple recipe by checking out the bakery and fresh produce sections. I found garlic Naan bread and I knew it would make amazingly fast pizzas when the directions on the back said just 3-5 minutes to heat. Yes, please! I grabbed a can of RO*TEL for a little spicy kick and we were in business for a simple, yet healthy meal that will warm us up in the winter, but truly be good year round! Andrew even said this spicy veggie pizza was one of the best pizzas I’ve made! (that’s a huge compliment if you don’t know!)

One of my most favorite parts about this recipe is that it is literally infused with flavors.  The peppers and mushrooms are cooked in the RO*TEL juice and then the sauce for the pizza is pureed RO*TEL.  YUM, YUM YUM!

*Kitchen Hack*

Before we get to the recipe, I want to share with you something that I love to do in the kitchen with my girl. We recycle empty spice containers to make our own seasoning blends and rubs. To make sure that our homemade blends stand out, I grab some Washi tape and tape around so that I can easily spot them in our spice cabinet. My girl loves taping things, so it’s a cute little activity for us too. I love making our own blends because I know exactly what is going in there.

Spicy Veggie Pizza

Ingredients
For the Pizza (makes 2 personal sized pizzas)
  • 1 can RO*TEL Original Diced Tomatoes and Chilis
  • 1 cup mixed peppers diced
  • 1/2 cup mushrooms diced
  • 1 1/2 tsp taco seasoning see below
  • 1/4 cup Mexican blend cheese divided
  • Cubed avocado as much as desired
  • Fresh cilantro
  • 1 package Garlic Naan Bread
For the Taco Seasoning
  • 1 Tbsp Chili Powder
  • 2 tsp Ground Cumin
  • 1/2 tsp Paprika
  • 1/2 tsp Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp. Italian Seasoning
Instructions
  1. Preheat oven to 400 degrees.
  2. Drain the juice from the RO*TEL can into a separate bowl.
  3. In a small skillet, over medium low, add the reserved juice, peppers, mushrooms, and taco seasoning.
  4. Cook, stir occasionally, for 5-7 minutes.
  5. While that's cooking, in a blender, pulse the RO*TEL until it is pureed.
  6. On each of the naan breads, spoon 2-3 tbsp RO*TEL puree across.
  7. Remove pepper mixture from heat and evenly divide between the two pizzas.
  8. Divide cheese between the two pizzas.
  9. Bake in oven 4-5 minutes or until cheese has melted.
  10. Remove from oven and top with desired amount of avocado chunks and cilantro.
  11. Serve immediately.

POPable Pizza Bites

If you haven’t figured out from reading my prior posts, I use my pizza dough recipe for everything.  For our baby shower, my sister and I decided one of the things we wanted were popable Pizza Bites. Since I am always trying to save money, I automatically knew I would be using my dough instead of buying Pillsbury biscuits that the original recipe used (plus, it’s much healthier).
My recipe for pizza dough is typically divided into 2 sections, one usually frozen for later.  For this recipe, whether you freeze the second ball depends on how many you want to make.  Each ball of dough will make 28 pizza pops. Andrew loves this recipe and has asked for it to be added to our rotation. These pizza bites were a big hit at our baby shower and the kids were all in love with them!
First start with one ball of dough.

Separate into 28 equal sized circles.

I personally find it easiest to separate the original ball into 4 equal pieces then each of those 4 balls, I separate into 7 mini balls as seen below.

Roll each ball into a small circle and layer one slice of pepperoni, a cube of cheese, and another slice of pepperoni on top

Fold up the edges around the filling.

So that it is completely enclosed.

Place each ball seam size down into a 13×9 baking dish

Mix seasoning together.Brush each pizza pop with olive oil

And then sprinkle with seasoning. Cover dish and place in freezer ovenight.

**Tip: using regular pizza dough, it has a tendency to rise more than using canned biscuits. Because of this freezing is optimal in this case.  Even if you can freeze for 30 minutes it will help greatly.  If you cannot wait, you can throw right into the oven and they will still taste amazing, but there will be space in between filling and dough from the dough rising.

Preheat oven to 350 degrees.  Pull out of the oven and remove the cover from the top.  Place dish into the oven for 12-15 minutes or until golden brown. Serve with pizza sauce.

POPable Pizza Bites

  • Pizza Dough Recipe you only need half the dough the recipe makes, you can freeze the rest for later like the recipe calls for or double everything below to make two batches
  • 56 pepperoni slices
  • Block of cheese I used Colby--cut into 28 chunks
  • Olive Oil
  • 1 tablespoon each: Parmesan Italian seasoning, Garlic powder
  • 1 jar pizza sauce
Instructions
  1. Directions:
  2. Roll out dough into 28 equal balls.
  3. Roll each ball into a small circle and layer pepperoni, cheese, pepperoni.
  4. Fold up edges around filling and place in 13x9 baking dish seam side down.
  5. Repeat until all balls are filled and in baking dish.
  6. Mix seasonings together.
  7. Brush each with olive oil and sprinkle with seasoning.
  8. Cover and freeze overnight (or at least 30 minutes).

Easy Pizza Calzones

Pizza in any form is my true weakness. Whether it’s a whole pizza, pizza bites, pizza calzones, pizza subs, pizza soup….okkkk, now I’m just getting carried away.  You get the point.  Pizza it just simply amazing.
 
Sticking with my goal of trying to eat healthier, sometimes it is difficult to balance what I secretly wish I could eat everyday without gaining an ounce love with what is healthy. I try to do my best at balancing this by making as much homemade food as possible. This way I can make substitutions as needed, PLUS I know exactly what is going into my food.

About a week ago I posted how to make super easy pizza dough. Part of that recipe includes freezing half the dough for later.  The other day I was in the mood for pizza, of course, but decided to throw a twist into it and make calzones.

I started by thawing out the dough and then rolling it in about a 12 inch circle.  I then added 3/4 cup marinara sauce (add as much or little as you want depending on how much sauce you like), sliced turkey pepperoni (about 24 pieces), and cheese (I used a mix of cheddar and mozzarella–about 1/2 cup each). Of course you can add whatever toppings you want 🙂 

Next, slowly beginning to roll up the dough from one side of the other.

Place seam side down on greased baking sheet. Place in a preheat oven at 350 degrees for 20 mins.
Remove from the oven and let sit for 5 minutes. You want to let it sit so forms up a bit.  If you cut it right away the sauce and cheese will just go everywhere (maybe that wouldn’t be so bad).  
Cut into slices. And devour enjoy!  I like to serve with some warm marinara sauce on the side for dipping! (you can never have too much sauce in my opinion).

This perfect pizza dough recipe is literally perfect every single time as long as you following the directions. Yeast dough that rises needs to be pampered a bit and it’s important that the directions don’t get messed with.  I promise it’s not super difficult to make perfect pizza dough if you keep working on it.  I’ve been making this dough recipe for what seems like forever. It literally works, without fail, for us every single time.  I’d encourage you to try it for yourself and let us know how it turned out!

I wanted you to be able to look at the amazingness that is making pizza dough without any interrupting words or thoughts on my part.
I didn’t really learn to start cooking at all until I was in college. Being transparent, I didn’t start learning to make food from scratch until I had our first child.  So much of what we ate before having her was processed, boxed foods. I’ve done a lot of trial and error since then.  I was always daunted at the thought of making pizza dough, but surprisingly it’s one of the first things made from scratch that I perfected.
For a long time it was always too stiff or too runny. I couldn’t figure out the balance to get it just right forever it seemed. Finally, I have perfected the combination of ingredients and it’s the most simple homemade perfect pizza dough.

Perfect pizza dough

Ingredients
  • 3 cups all-purpose flour divided into 3 parts
  • 2 1/4 tsp active dry yeast or 1 package
  • 1/2 teaspoon Salt
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil vegetable oil would also work
  • Extra flour for surface
  • Desired pizza toppings Don't skimp on the cheese
  • Optional: Italian seasoning or Garlic Powder to season dough
Instructions
  1. In medium sized bowl, mix 1 3/4 cups flour with the yeast and Salt. (If adding optional Italian seasoning or Garlic Powder, add it now)
  2. Add the warm water and oil.
  3. Beat with a whisk until a thick pancake like batter forms.
  4. Add 1 more cup of flour to the mixture and using a wooden spoon, stir together, enough so the mixture holds together by itself.
  5. Lightly flour a flat surface and with a little flour on your hand, remove the dough mixture from your bowl onto the surface.
  6. Knead in another 1/4 cup flour (may need to add up to 1/2 cup) stopping once the dough is lump free. Do not overwork your dough.
  7. **See tips below for thin crust**
  8. Place dough in a bowl and cover with a tea towel (or other kitchen towel that is large enough to cover bowl completely)
  9. Let the dough in the bowl sit, covered, for approximately 45 minutes.
  10. Heat the oven to 425 degrees.
  11. Lightly flour pizza stone or lightly greased baking sheet.
  12. Roll dough out onto floured surface.
  13. Place in oven for 8-12 minutes. Thin crust - 8 minutes, Thick crust - 10-12.
  14. Remove the dough from the oven and place desired toppings on top of the crust.
  15. Place back into the oven for an additional 8 minutes or until the cheese has completely melted and is bubbly.
Recipe Notes

1. Make sure you are adding warm water. This is what activates the yeast.
2. Do NOT overwork the dough. Each step should be just enough that you can move to the next one. This is especially important when you are kneading.
3. If you want to make a personal pizza size or very thin crust, you may cut the dough into two equal parts after kneading. You can make two pizzas this way or freeze half for later use.
4. You could technically use the dough after 20 minutes of rising, but it's really ideal to let it sit for at least 45 minutes, up to 2 hours.
5. Don't put a lot of sauce in the center of your dough or it will get soggy.
