Being a parent means that every night, there are little ones that need fed. It’s a never-ending cycle and while we all love our kids dearly, having to physically make someone three meals a days, does get exhausting.  Especially, I’m sure if you don’t like to cook to being with.
When I first had our daughter, my idea of cooking meals consisted of some cans or jars, a few boxes, and a lot of hope. We quickly realized we didn’t want to eat a lot of processed foods for our children and because of that, it meant that I needed to get better with cooking.
One of the biggest things that helped me was being able to find super flavorful meals, like this Slow Cooker BBQ Parmesan Pork Loin, that could not only feed us multiple meals, but also were easy to throw together.  One of the reasons I love our slow cooker so much is that I am able to throw everything inside of it early in the morning and then by the end of the day dinner is completely ready.  The meals, whether making meat or a soup, are always so tender and it feels like the flavors have more of a chance to really merry together.

One of the biggest things when making such a large piece of meat for us is that we often have a lot leftover. No one really likes the same meal over and over again, so often you make wonder what to make with leftover pork loin.  This is also a great way to knock two or more dinners out of the way. Simply purchase a larger pork loin than the recipes calls for and double the sauce.  Then, you can use the leftover pork loin for multiple meals throughout the week.  Some of our favorite leftover pork loin recipes are:

Ingredients
  • 1 2-3lb pork tenderloin
  • 1 cup BBQ Sauce recipe
  • 1/2 cup Parmesan cheese
  • 1/4 cup honey
  • 2 tbsp olive oil
  • 2 tbsp dried basil
  • 1 tbsp garlic powder
  • 1/2 tsp Salt
Instructions
  1. Spray slow cooker with cooking spray.
  2. Remove excess fat from tenderloin if desired.
  3. Place loin in slow cooker.
  4. In a bowl, mix bbq sauce, cheese, honey, basil, garlic, olive oil, and salt until well combined.
  5. Pour entire mixture over top of the loin, cover, and cook on high for 4 hours or low for 7-8 hours.

  6. Internal temperature should be 165 degrees when finished.

**If you would like to make a gravy with the juice, mix one cup of juice with one tablespoon flour.  Whisk in pot on medium heat until desired thickness is reached.  If it’s too thick, add more juice.  Too thin, add 1/2 teaspoon more flour at a time until desired thickness is reached.

This Ultimate Pulled Pork Grilled Cheese sandwich recipe is the perfect lunch or dinner sandwich for the whole family! Stack it super high or make a smaller version for the best grilled cheese recipe!

I can’t really pinpoint an exact time that I fell in love with pulled pork, but as a mom, it’s one of my favorite meals.  We alternate between pulled pork and pulled chicken, so feel free to substitute either of these meats in this recipe. We make a slow cooker pulled pork recipe with our homemade BBQ sauce which is one reason I love it so much.

My time as a mom, is limited. Even as a stay-at-home mom, I work from home and I homeschool, so we have a lot going on every day.  I’m constantly on the go and making lists and being able to throw dinner in the crockpot in the morning in under 10 minutes and have it ready at dinner, is a HUGE win for me.

Making a Gourmet Pulled Pork Grilled Cheese

Our gourmet pulled pork grilled cheese sandwich has a large combination of toppings. Think of this as a recipe that you would see served at a fun restaurant. Together, this sandwich works magically together. However, we understand that this may be unrealistic or to large for most people (especially littles).  Feel free to alter it however you need.

What toppings go on an ultimate pulled pork grilled cheese: 

  • pulled pork
  • mac and cheese
  • onion rings
  • bacon
  • ham
  • pineapple
  • lettuce
  • smoked gouda slices
  • cream cheese

Clearly, once you start piling these toppings on, you have a giant sandwich. It’s fun to eat though! You can make homemade pulled pork by following our homemade pulled chicken recipe and just sub the chicken for the same amount of pork tenderloin. Use your favorite mac and cheese recipe and then layer everything else between two slices of cooked, garlic texas toast. After that, throw in a skillet with a pat of melted butter and grilled until golden brown on both sides! Voila! Perfect pulled pork grilled cheese sandwich!

  • 8 slices texas toast, cooked
  • 2 cups pulled pork, cooked
  • 8 onion rings, cooked

  • 4 slices fresh pineapple
  • 1/4 cup spring mix lettuce
  • 8 slices smoked gouda cheese
  • 2 oz cream cheese
  • 2 tbsp unsalted butter
  • Homemade BBQ Sauce, optional
Instructions
  1. On one slice of texas toast layer 1/2 cup pulled pork, 2 onion rings, 1/4 cup mac and cheese, 1 slice bacon, broken in half, 2 slices ham, 1 slice pineapple, 1/4 of the lettuce, 2 slices of smoked gouda, 1/4 oz of cream cheese. Top with another slice of texas toast. 

  2. In a skillet, over medium heat, melt 1/2 tbsp of butter. 

  3. Place sandwich in melted butter for 1-2 minutes or until golden brown. 

  4. Carefully flip and cook for another 1-2 minutes. 

  5. Remove from heat and repeat with remaining sandwiches.

Some people would think that life homeschooling would be so much easier than a parent that works outside the home and sends their kids to a school outside the home.  The truth is, it’s not. Homeschooling life with a work from home parent has it’s own unique set of challenges. Primarily, for me, I keep our girls so active that we are barely home. Between co-op classes, playdate meet-ups, sports practice and more, we are always on the go.

So we need quick meal solutions, too. 

While I want quick meals, I also want wholesome meals.  I want the meals that I create for my kids to be real ingredients and keep their bellies filled. One thing I’ve found is that while they will eat a bowl of cereal any night for dinner that I can’t get a meal, they aren’t satisfied.  They don’t sleep as well that night.  They wake up cranky and extra hungry.  It’s just not a good thing for anyone in our family.

Getting those wholesome meals on the table doesn’t have to be difficult or time consuming. 

It’s really true, I promise.  That was one of my biggest complaints when I was learning how to cook. Everything that tasted really good seemed to take forever and a day to make. While some really great meals do take awhile to cook, it doesn’t mean all of them have too.  There’s still plenty of meals that I have up my sleeve that only take an hour or less.  This particular meal is about 30 minutes.

Creamy Cajun Pork Pasta

This creamy cajun pork pasta recipe is just what the cook ordered for a quick but wholesome meal for the whole family. It’s rich, yet simple and packed full of flavor.  Our girls gobbled it up and even asked for more.

We used Smithfield All Natural Pork Tenderloin. It’s naturally tender and juicy, yet has no added steroids, hormones or artificial ingredients. When you start by cutting the pork into medallions, it’s the perfect everyday meal solution.

Ingredients
  • 1 Pork Tenderloin
  • 1 lb fettuccine
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 3/4 cup parmesan cheese
  • 1 tbsp cajun seasoning divided
  • 1/2 tsp garlic powder
  • 1/4 tsp pink salt (more to taste)
  • 1/4 tsp black pepper freshly cracked, (more to taste)
  • 1 tbsp olive oil
  • 2 roma tomatoes diced
  • Green onions diced finely
Instructions
  1. Bring a large pot of water to boil.
  2. Open your package of Smithfield All Natural Pork tenderloin.
  3. Separate the two pieces.
  4. Cut one piece of tenderloin into 1 inch medallions.
  5. Do the same with 1/4 of the second tenderloin piece.
  6. In a small bowl, mix together 1 1/2 tsp cajun seasoning, 1/2 tsp garlic powder, salt and pepper to taste.
  7. Spread seasoning mixture evenly onto both sides of the pork medallions.
  8. Add pasta to boiling water.
  9. Heat oil in a large skillet over medium heat.
  10. Add medallions to pan and cook for 3 minutes on each side. Pork should reach an internal temperature of 165 degrees.
  11. Remove medallions to a plate.
  12. In the same skillet add the butter and heavy cream.
  13. Using a wooden spoon, scrap the bottom of the pan to get the leftover pork pieces up.
  14. Once butter is melted, add in the parmesan cheese and remaining cajun seasoning.
  15. Turn heat to low, stirring often.
  16. Once pasta is cooked al dente, drain, reserving 1/2 cup of pasta water.
  17. Add drained pasta and reserved water to the sauce.
  18. Combine well.
  19. Add the pork back to the dish and heat thoroughly.
  20. Remove from heat.
  21. Top with diced tomatoes and green onions.
  22. Serve immediately.
Recipe Notes

Tip: With the remaining 3/4 of the second piece of tenderloin, add to a crockpot with our BBQ sauce and cook on high for 4 hours. Shred for BBQ Pulled Pork for a second meal the next day.

Dinner’s not something I usually am in charge of on a regular basis.  Don’t get me wrong, I’m a beast in the kitchen. I would go as far to say that I’m the better cook in the house, but don’t tell Larisha I said that. However, I don’t particularly like to cook though. Sheet Pan Garlic Herb Pork Loin and Vegetables

Ingredients
  • Smithfield Roasted Garlic & Herb Loin Filet
  • 2 lbs baby potato medley
  • 1 lb green beans
  • 8 oz. Zesty Italian Dressing
  • Salt and Pepper to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Snap ends off green beans. Put into a large bowl, set aside.
  3. Wash potatoes and poke a few holes in each one with a fork. Place in bowl with green beans.
  4. Add salt and pepper to taste.
  5. Pour in Zesty Italian Dressing and toss.
  6. Remove Smithfield Roasted Garlic & Herb Loin Filet and slice into 1/2 in medallions.
  7. Placed sliced medallions in the middle of a baking sheets.
  8. Put potatoes and green beans around the edge of the baking sheet.
  9. Bake for 30 minutes or until pork has reach an internal temperature of 165 degrees and potatoes are fork tender.

Vegetarian Pulled Pork Potato Nachos

I love when I can throw things on the grill in summertime.

It’s hot y’all.  Granted, the rain here recently has cooled things off, I’m reminded on Facebook that just last year the temperature felt like 107 degrees. ONE-HUNDRED-AND-SEVEN.  However, I’m getting hot just thinking about it, to tell you the truth. Thankfully, it’s not THAT hot, but it’s still hot.  Hot enough that I don’t feel like standing over a stove or even heating up the oven, because that means it’s going to stay hot in our house for awhile.  I. DON’T. GOTS. THE. PATIENCE. FOR. ALL. THAT.

So, back to the grill.

These Vegetarian Grilled Pulled Pork Potato Nachos are exactly what you need in your life. 

But, wait.  URRRCHHHH.  Hold up.  These aren’t just any Grilled Pulled Pork Potato Nachos. These, my friends are Vegetarian Grilled Pulled Pork Potato Nachos.  Sure, if you are trying to use grandma’s famous recipe, do you boo, but please hear me out for just a second on trying them this way.  We have been trying to eat less meat, but I’ve always been scared of meat alternatives. However, a few months ago we perfected a black bean burger and since then, I’ve been dedicated to trying other alternatives.

Recently, I was walking through Wal-mart and saw MorningStar Farms® Veggie Pulled Pork and thought that it would be amazing for an easy dinner of pulled pork nachos. It’s a brand new product and we were excited to give it a try. The inspiration for this particular Vegetarian Grilled Pulled Pork Potato Nachos came from my friend who is currently gluten-free. She’s always looking for ideas and potato nachos are just the trick! As a result, perfection ensued.

Vegetarian Pulled Pork Potato Nachos

Ingredients
  • 8 medium potatoes thinly sliced
  • 1/4 cup Olive Oil
  • 3 tbsp chicken spice rub
  • 1 package MorningStar Farms® Veggie Pulled Pork
  • Toppings: Mozzarella Cheese Cheddar Cheese, Guacamole, Plain Greek Yogurt (sub sour cream), green onions, cilantro, salsa, black beans, diced onions, sliced sweet peppers or jalapenos
Instructions
  1. Preheat grill to 400 degrees.
  2. Thinly slice potatoes.
  3. In a large bowl, toss the potatoes with the olive oil and chicken spice rub until evenly coated.
  4. Lay in single layer on baking sheets (may have to batch cook depending on your grill).
  5. Cook for 20-25 minutes (watching the last 5 minute to ensure they don't burn).
  6. *Tip: Thinly sliced potatoes after cooking time will be mostly crunchy
  7. Remove from grill.
  8. Cook MorningStar Farms Veggie Pulled Pork according to directions.
  9. On a serving tray, layer potatoes, pulled pork, and desired toppings from list above.
  10. Serve & enjoy!

The end of March and beginning of April are always this awkward time.  Do you need a winter coat or sun dress? Is it going to pour down rain for three days or are we getting a blizzard? The slight uptick in warmer weather excites the best of us.  Longer days of sun, getting our hands dirty in the Earth’s soil, and the aroma of the grill excite our entire family.  There’s just something about being out in the fresh air that truly lifts your spirits.  Even the smallest of our family members truly enjoys the outdoors and the changing of seasons.

Now, I don’t know about you, but for me, the longer days always lead me to loosing track of time.  I feel like it’s only 2 o’clock when it’s really 5:30pm. Then, I’m freaking out about what to get on the table. As soon as the weather warms up, I’m ready to fire up the grill.  I’ve always loved cooking on a grill and the way food tastes after being cooked this way.  There’s just something so delicious about grilled food. The added flavor means you can really get it packed in there even if you are running short on time. Plus, no one likes the house hot once the weather warms up. Grabbing hot off the grill food is the perfect way to solve that conundrum too.

Now, I’ll admit, I hadn’t been grilling much besides hot dogs and burgers up until a few years ago.  It was then, that I realized that grilling possibilities are really endless. Now I’m a grilling machine, always wanting to test out the waters of what our grill can do. I’m always seeing bacon wrapped food, so I’ve been wanting to try it myself. Then, I recently had a brilliant idea for using our honey mustard BBQ sauce to make honey mustard BBQ bacon wrapped pork chops.

I went to our local Walmart and grabbed Smithfield’s All Natural Fresh Pork boneless pork chops. It’s naturally tender, but without added steroids, hormones, or artificial ingredients and raised in the USA. One home, I sprinkled a little salt and pepper on both sides and smothered with our homemade honey mustard BBQ sauce.  Then wrapped Smithfield All Natural uncured bacon around each chop, smothered with more sauce and grilled! DELICIOUS!  These honey mustard BBQ bacon wrapped pork chops are sure to please a crowd and are the perfect dish to whip up when you’re having company over.

Honey Mustard BBQ Bacon Wrapped Pork Chops

Ingredients
  • 1 package Smithfield All Natural Fresh Pork Boneless Pork Chops
  • 1 package Smithfield All Natural uncured bacon
  • Honey Mustard BBQ Sauce doubled if you want extra for dipping
  • Salt Pepper to taste
Instructions
  1. Heat and oil grill to 450 degrees.
  2. Salt and Pepper both sides of each pork chop to taste.
  3. Smother each side in Honey Mustard BBQ sauce.
  4. Wrap two pieces of bacon around each pork chop.
  5. Secure bacon with toothpicks.
  6. Smother with more sauce.
  7. Place bacon wrapped pork chops on the grill.
  8. Cook for 3 minutes, flip and cook for another 3 minutes.
  9. Remove to indirect heat and cook until an internal temperature of 145 degrees is reached.
  10. Take off of grill and let set for 3 minutes to reach an internal temperature of 165 degrees.
  11. Remove toothpicks and serve.
Recipe Notes

It's really important that you oil the grill.

Repurpose leftover All Natural Fresh Pork by slicing up and adding to a wrap with tomatoes, lettuce, grilled mushrooms, and leftover sauce!
