This Frozen Fruit and Yogurt Popable Bites are the perfect kid’s summer treat!

Growing up, the summers meant lots of fun!  One of the best things was the almost endless amount of ice pops and other frozen treats that we were allowed to consume.  I remember whenever we went to my grandparent’s house, we got these ginormous ice pops that took forever to eat.

Naturally, my girls love frozen treats too.  What I love is how easy it is to make homemade frozen treats. Kids literally don’t care what you put inside a frozen treat either.  It’s the perfect opportunity to stuff in a ton of fruits or vegetables and get in their daily allotment of nutrients.  One of the girls favorite ice pops are a combination of avocado and banana.  Seriously!

What I don’t like as a parent though, is that any variation of ice pops have a tendency to get a little messy, especially if it’s hot outside.  They start dripping.  Things get sticky. And often, the kids don’t even want to finish the entire ice pop which is frustrating as we try to limit the waste we have.

Insert: Frozen Fruit and Yogurt Popable Bites

Kids are still getting a delicious frozen treat that’s healthy for them, but they can just pop them in their mouth and eat them within seconds, minimizing the mess and the waste. It’s a win, win for everyone. Plus they are super easy to make. Our girls loved making them almost entirely by themselves.

Frozen Fruit & Yogurt Popable Bites

Ingredients
  • 1 cup frozen strawberries
  • 1 cup frozen mixed berries
  • 1 cup vanilla Greek yogurt
Instructions
  1. Let frozen berries, slightly unthaw.
  2. Chop with a knife into tiny pieces.
  3. Combine chopped mixed berries and chopped strawberries together in a bowl.
  4. Inside silicone mold, layer berry mixture, then yogurt.
  5. If any berry mixture is left over, top yogurt with remaining mixture.
  6. Place in freezer for 4 hours or until frozen solid.
  7. Serve immediately or pop out and store in air tighter container in freezer for up to 2 weeks.

Tip:  Empower your kids by letting them cut things on their own.  These amazing kid’s knives are what we are using in the video. They are sharp enough to cut the food, but they can’t cut your child.  The girls love asking for their knives to take control themselves in the kitchen!

Dairy Free Peach Mango Yogurt Chicken with a Peach Mango Chutney.

I know, there’s a word in there that is throwing off your idea of whether you want to try this recipe or not. The answer is yes.  Yes, you do want to try this recipe. I promise it’s not as crazy as you may actually think it is either. The inspiration behind this idea actually came from my friend Amiyrah, and I too thought the idea of yogurt chicken was baffling. However, the more I considered the idea, the more I became okay with the thought of it.

I mean, we put creamed soup on chicken, we put sour cream on chicken, we put butter on chicken, so why not yogurt? Once I finally got the courage to try it, I was blown away. However, I still had to convince Andrew. He gets home later than we eat and when I told him what it was, his picky behind was like, nope, not eating it. Eventually, I got him to try it! And guess what! He liked it!

The thing is, we’ve only ever used plain Greek yogurt to make our yogurt chicken. I wanted to be bold and adventurous and try new flavors. When I saw Silk Dairy-Free yogurt alternative, I knew that we immediately needed to try it.  The delicious taste and creamy texture make it the perfect topping for any meal.

I am always trying to figure out flavorful recipes for friends who are dairy free because I know how hard it can be to find them. I was dairy free for 6 months after each pregnancy until our girls outgrew their dairy intolerance. Even now, my close friend is searching for dairy free meals for her family.

The result. Perfection.

This well seasoned chicken is smothered in Peach Mango Silk Dairy-Free Yogurt Alternative (made with soy milk) and then topped with a flavor-packed spicy peach mango chutney that will blow your taste buds away.

The taste together is really impeccable and I know we will have this so many more times in the future. This recipe would also be amazing on top of pork chops as well.

Dairy Free Peach Mango Yogurt Chicken

Ingredients
for Peach Mango Chutney
  • 1 fresh mangos ripe but not too soft, peeled and cubed
  • 1 fresh peach skin removed and cubed
  • 1 tablespoon coconut oil
  • 1/2 medium sweet onion finely diced
  • 2 cloves garlic minced
  • 1/4 cup red sweet pepper finely diced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon minced fresh ginger
  • 1/2 cup orange peach mango juice
  • 1/2 tablespoon yellow curry powder
  • pink salt and fresh cracked pepper to taste
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • zest from 1/2 large orange
  • 1/3 cup golden raisins
for seasoned chicken
  • 4 large boneless chicken breasts
  • 1 container Silk Dairy-Free Yogurt Alternative Peach Mango flavor
  • 1 teaspoon chicken rub
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ginger
  • 1/4 teaspoon ground mustard
  • 1/8 teaspoon allspice
Instructions
for Peach Mango Chutney
  1. In a large skillet, melt coconut oil over medium heat.
  2. Once melted, add all ingredients except the mangoes, peaches, and raisin.
  3. Cook down for 5 minutes.
  4. Stir.
  5. Turn down heat to low and add in peaches and mangoes.
  6. Cook, stirring occasionally, for 15 minutes.
  7. Add in raisins and good another 10 minutes, stirring occasionally.
  8. Remove from heat and let cool.
for seasoned chicken
  1. Combine all seasoned together well and rub into each chicken breast on both sides
  2. Smoother chicken with Silk Dairy-Free Yogurt Alternative, Peach Mango flavor
  3. Cook chicken at medium high 5 minutes on each side or until an internal temperature of 165 degrees F is reached.
  4. Top with Peach Mango Chutney and serve.

Teaching to Pour + Chocolate Peanut Butter Yogurt Pops

Lesson 6: Teaching to Pour

Pouring is one of those kitchen activities that makes us as parents want to gouge our eyes out. It’s cringeworthy. We want to let them have independence but standing there trying not to help them while seeing the huge potential of a disastrous mess is enough to make us reach for the anxiety meds. Am I right?

But I digress.

It’s one of the most important lessons they’ll learn while being in the kitchen.  Just take my advice and go ahead and order extra paper towels to have on hand. You may even contemplate buying stock.

How to Start

If you think about it, there’s not many recipes that you make in the kitchen that don’t require you to pour at least one thing while you are making it. We suggest you start teaching by helping them in the beginning. Letting them hold onto the milk container or pour their own juice, for example. We also started by letting our girl pour from measuring cups with our aid into larger bowls. She’s now about to be 4 and she does a really good job with minimal mess about 90% of the time. You’ll see in the video below that there’s typically always a little mess. But hey, we’re learning here folks!  Messes can get cleaned up!

Tips for teaching your kids to pour

  • Use a learning tower to get them stable at the counter
    • Standing on a stool or sitting on the counter, doesn’t stabilize kids as much as a tower will
  • Use containers with spouts on them.
  • For pouring into small openings, try using a funnel with them.
  • In the beginning, only do cold or room temperature foods, no hot liquids.
  • Always try to use lightweight containers until they have mastered the concept of pouring
  • We recommend having them pour into larger bowls in the beginning, instead of smaller ones.
    • The larger surface area reduces the risk of a mess

One thing we found super interesting from watching our older girl was that while we as adults typically pour above a container (below), it is easier for her to rest the container she’s pouring on whatever she is pouring into for added stability.

**Note: This recipe is based on our popsicle molds that we have on hand. You may need to make more or have some mixture left over depending on the molds that you have.
