Sweet Potato Stew

Ingredients

  • 2 tbsp olive oil
  • 1 red onion
  • 5 cloves garlic
  • 1 green pepper
  • 1 carrot
  • 1 can 15oz black beans
  • 1 can 15oz red kidney beans
  • 3 cups diced sweet potatoes
  • 5 cups bone broth or chicken broth
  • 1 tsp cajun seasoning recipe follows
  • salt and pepper to taste

For Cajun Seasoning (yields 4 tbsps)

  • 1/2 tsp salt
  • 2 tsp garlic powder
  • 2 1/2 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp cayenne
  • 2 1/2 tsp Italian Seasoning

Instructions

  1. In a food processor, chop onion, garlic, green pepper, and carrot.
  2. Heat a large pot on medium, add olive oil and heat.
  3. Add vegetables mixture from the food processor and cook for 5 minutes, stirring often, not to let the onions or garlic burn.
  4. Add beans, broth, and sweet potatoes, stirring to combine.
  5. Add in cajun seasoning.
  6. Cover and reduce heat to low. Cook for 45 minutes.
  7. Serve immediately.
