Season thinly slice ribeye with garlic powder, black pepper, and smoked paprika.
Heat 1 tbsp oil in a large skillet.
Add onions and peppers and saute for 3-5 minutes of until onions are translucent.
Remove from skillet and place on a plate. Set aside.
In the same skillet, head remaining oil.
Add the seasoned ribeye.
Cook for 2-3 minutes, chopping up along the way.
Season with salt if desired.
Flip and Cook another 2-3 minutes or until steak is cooked through.
Add the onions and peppers back to the skillet and combine well.
Remove from heat.
Spread butter on inside of both sides of buns.
Place face down in skillet for approximately two minutes or until golden brown.
Layer each sandwich with two slices of cheddar and one slice of Provolone, along with 1/4 of the meat mixture.
Repeat with remaining sandwiches.
Preheat oven to 300 degrees and bake sandwiches for 7-10 minutes or until cheese is melted.
