Smoked Walnut Crusted Salmon

Ingredients

  • 4 Alaska salmon filets
  • 1 1/2 cups walnuts chopped
  • 1/4 cup dark brown sugar packed
  • 1 Tbsp unsalted butter
  • 1 tsp smoked paprika
  • 1 tsp freshly cracked black pepper
  • 1/4 tsp pink salt
  • 3 tsp fresh dill chopped
  • zest from one lemon
  • 3 tbsp maple syrup

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a skillet over medium low heat, add the chopped walnuts, brown sugar, and butter.
  3. Stir constantly for 5 minutes. Transfer to parchment lined baking sheet and spread out quickly.
  4. Set aside to cool.
  5. Preheat oven to 400 degrees.
  6. In a small bowl, combine smoked paprika, cracked black pepper, and pink salt.
  7. Gently rub seasoning mixture into each of the four fillets evenly.
  8. Spread chopped fresh dill and lemon zest across each fillet.
  9. Drizzle maple syrup evenly across the salmon.
  10. Gently and evenly top salmon fillets with the walnut mixture.
  11. Cook in preheated oven for 10 minutes or until temperature has reached 145 degrees.
