Double Chocolate Cake Cookies

Ingredients
- ½ cup unsweetened dark cocoa powder
- 1 cup cake flour
- 1½ cup flour
- 1 teaspoon arrowroot powder cornstarch could be used as a substitute
- ¾ teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter 2 sticks, cold, cut into pats
- 1 cup brown sugar packed
- ½ cup white sugar
- 2 large eggs
- 1 tsp vanilla
- 1 1/2 cups chocolate chips milk chocolate used in these photos; however, we've done white, semi-sweet, peanut butter chips, or a combination of a variety of these as well.
Instructions

Preheat oven on 410 degrees F.

In a medium bowl, whisk together cocoa powder, both flours, arrowroot powder, baking soda, and salt. Set aside.

In a large bowl, cream together butter and sugars.

Beat in eggs 1 at a time just until mixed in.

Add vanilla and mix just until blended.

Add all dry ingredient mixture and stop as soon as it's combined.

Fold in chocolate chips.

Line baking sheet with parchment paper.

Roll mixture into 12 large balls.

Cook for 8-12 minutes or until set.

Remove and let cool for 5 minutes.

Serve immediately or store in an air-tight container for up to 7 days.
