Cinnamon Apple Bread

Fall is finally here and it’s the season for pumpkins, apples, mums, and bonfires. This is my absolute favorite time of the year.  Wearing hoodies to keep the chill away…perfection.  We have a tradition of loading up the car and going apple picking.  There is something to be said for picking fresh, fragrant apples right off of the tree.  We spent a good portion of the day trying to stop the little mister from taking bites out of the apples. And now that we’re home, with apples coming out my ears, what am I to do with them all?  Apple pie is my favorite dessert, but who has time to make an apple pie with a toddler running afoot?  I sure don’t!  

Insert a delicious Apple Cinnamon Bread.

I whipped this entire recipe up from start (including the peeling and chopping of apples) to finish in less than 20 minutes time.  The smell, oh my goodness, the smell that this bread filled my house with was amazing.  My little guy kept sniffing the air saying “momma mmmm”.  You’re right buddy, it’s totally mmmmm.  The mister and I couldn’t wait for the bread to even cool before we had to try a piece.  I’m loving it with a smear of cream cheese and my coffee in the morning.  

 

Ingredients

1/2 cup of packed Brown Sugar
2 teaspoons of ground Cinnamon
1 teaspoon of Nutmeg
1/2 cup of pure cane sugar
1/2 cup of butter, softened
2 eggs
2 teaspoons of Vanilla Extract
1 1/2 cups of all-purpose flour
1 1/2 teaspoons of baking powder
1/2 cup of almond milk
2 cups of organic apples, peeled and diced



Instructions
Preheat over to 350 degrees. Grease and flour 9×5 inch loaf pan. Mix brown sugar, cinnamon, and nutmeg together in a small bowl and set aside. Using a mixer, combine white sugar and butter until smooth.  Add eggs, one at a time, and vanilla and continue to beat on medium speed until combined. Add flour and baking powder, then milk.  Pour half of the batter into the prepared pan.  Cover with half of the apples.  Pat apples into batter with the back of a spoon. Sprinkle with half of brown sugar, cinnamon, nutmeg mixture.  Pour the remaining batter over apple layer, top with remaining apples and add more brown sugar, cinnamon, nutmeg mixture.  Pat topping into the batter with back of large spoon.  Bake for 50 minutes or until toothpick inserted in the middle of the loaf comes out clean.
You should attempt to wait until it cools before eating, but we understand if the desire to taste just a piece overwhelms your senses.  Just be careful!  Enjoy!
