We received NatureSweet products to facilitate this recipe. The packaging says “Heavenly Salad Tomatoes” and they couldn’t be more right. They are seriously the perfect little snack for me and I love the burst of flavor from them when I take a bite out of my fresh salad. When you are on the go, they make for a great treat since you can eat them right out of the container (make sure to rinse them first!). If I’m being honest, I could eat the entire container in one sitting. But hey, maybe that’s just me (tell me it isn’t, please!?).
See all these bright and beautiful summer colors bursting through your dinner? That’s what you want. Who really wants bland and boring? And when presented in a fun ways, even your picky kids (ehh, significant other in my case) will enjoy it as well. Another personal tip from me: We don’t use as much meat as most people or recipes call for. This saves us money in the long run and we just increase the amount of veggies that we would typically use.
Ingredients:
1 tbsp olive oil
1 boneless chicken breast, cut into bite sized pieces
1 tsp Italian Seasoning
1/4 tsp Paprika
1/4 tsp Cumin
1/4 tsp Pepper
1 1/2 cups red peppers, diced
1 cup green peppers, diced
2 cups uncooked instant brown rice
10 oz reduced-sodium, organic chicken broth
3 cups broccoli, cooked, cut in bite sized pieces
5 oz NatureSweet Cherubs, quartered
Parmesan cheese, optional
Directions:
In a large skillet, an oil and heat over medium. Add the chicken, sprinkle the seasonings evenly across the top, and brown for 5 minutes. Then add the peppers and continue to cook for 5 more minutes. Next, add the chicken broth and brown rice. Cover skillet and let cook for 5 minutes or until broth has evaporated. Stir in cooked broccoli and NatureSweet Cherubs until heated through. Remove from heat and serve. Sprinkle Parmesan cheese on top if desired.

Cherubs are Heavenly Salad Tomatoes, Sunbursts are Sweet Golden Snacking Tomatoes, Cherriots are snacking tomatoes, and Glorys are perfect ingredient tomatoes. Glorys would have been the preferred for this recipe, however, I couldn’t find them at my local store. The Cherubs proved to live up to their heavenly expectation though, and made the dish burst with flavor. We absolutely love this dish and hope you do as well!
