Bacon, Egg, and Cheese French Toast Sandwiches + Time for Mom

When I was pregnant with Skibbles, I spent a lot of time laid up on the couch, which meant I spent a lot of time watching The Food Network.  It didn’t particularly matter what show was on, though I did have my favorites [insert anything with Bobby Flay].  But one small little detail changed out lives.

For the life of me, I can’t remember what I was watching.  I’ll blame that on “prego brain”. But, we were told to make french toast from Challah bread.  I didn’t even know what this was.  I went into the store looking for Halla bread, but then after some googling realized that it was spelled Challah.  Challah is made from eggs, fine white flour, sugar, yeast, salt, and water and is then braided.  It’s sweet, thick, and I promise makes the most AMAZING french toast ever, especially if you are stuffing the french toast.

Recently though, I learned a local bakery, Wild Flour Bakery, made Challah Buns.  I immediately knew that I wanted to make a breakfast sandwich from them.  While this particular bakery can only be found in the Philadelphia/Jersey region, I encourage you to call local bakeries to see about getting them for yourself.

I finally decided that I was going to make a Bacon, Egg, and Cheese French Toast Sandwich.  It was one of the best decision I ever made.  It’s super easy and can even be prepped the night before.
Ingredients:
For french toast-
4 Challah Buns
3 eggs
1 cup organic milk
Cinnamon and Nutmeg to taste
For sandwiches –
4 round eggs, cooked, divided
4 pieces of sliced cheddar cheese (or 1/2 cup shredded, divided)
4 pieces bacon, cooked
maple syrup
Directions:
In a large bowl, whisk 3 eggs, milk, cinnamon, and nutmeg.  Cut Challah buns in half.  Heat skillet on medium low.  Add 1 tablespoon coconut oil to skillet.  Place the inside of each half of the bun in the egg mixture for 5 seconds.  Drain off excess.  Place mixture side down into skillet.  Cook 3-5 minutes or until golden brown.  Remove from heat and brush with maple syrup.  Add cooked eggs, bacon, and cheese to each sandwich.  Serve & Enjoy!
