Growing up, baking cookies was an integral part of our holiday planning. And not just a few cookies one time. We baked for DAYS. At our house, at our aunt’s house, at friend’s houses. Everywhere. It’s such a great memory and I’ve enjoyed doing it with Skibbles this year as well. One fond memory I have is that every year my mom would do a cookie swap with friends. Every year it was on a rotating schedule of who would host, but without fail, my mom would always make her Pineapple Glazed cookies for the swap. I’ve upheld the tradition with my own friends the last two years and added my own twist with my Pineapple Orange Glazed Cookies.
Andrew, as well as know is the pickiest eater in the world, however, he says that after my triple chocolate chip cookies, these are his favorite. They are super soft, full of flavor, and very moist …yes, I realize everyone on the face of the planet hates that word.
*Glaze*
1 1/2 tbsp pineapple juice
1 1/2 tbsp orange juice
1 cup powdered sugar
Directions:
Preheat the oven to 325 degrees F
In a food processor or blender, puree the pineapple until fine. Set aside. In a small bowl, mix together flour, baking powder, baking soda, and salt. Set aside. In a large bowl, combine shortening and brown sugar very well. Beat in egg. Add vanilla and pineapple. Gradually add flour mixture to cream mixture.
Drop by tablespoonfuls onto a baking sheets. Bake 9-12 minutes in oven.
Prepare glaze by whisking together all ingredients until well combined.
Allow cookies to cool on sheet for 3-4 minutes. Then remove to a wire rack. Drizzle with glaze and allow to cool completely.
