Red, White, & Blueberry Watermelon Cake with Homemade Whipped Topping + Time For Mom

This past weekend was the official launch of summer.  Growing up, summer’s were the best of times.  Cookouts with the family, swimming all day long, and running around with my cousins that I didn’t get to see very often unless it was a holiday.  Between the hot off the grill hot dogs, my aunt’s famous potato salad, or the juicy watermelon that was usually gone before the hot food was ready, we didn’t have a care in the world.  One of the best memories is sitting with my cousins counting watermelon seeds trying to see who found the most. It’s these moments that I live to create with my daughter as she grows up. 

Even though I desperately want to create amazing memories with Skibbles, I also want to make sure that she has healthy alternatives as well to enjoy growing up.  A get together usually isn’t complete without a little something sweet, but it doesn’t have to be loaded with sugary sweets.  I had seen a watermelon cake floating around but every one that I looked up called for Cool Whip.  Since we don’t eat that (didn’t you know Cool Whip has more than 15 ingredients!?!?), I decided to recreate my own watermelon cake masterpiece with a homemade whipped cream and the result was mouth watering.  
Seriously, one of the easiest things I’ve ever made.  Minus the freezing time, you can have the entire thing assembled in under 20 minutes.  I made this for the first time at our Memorial Day cookout this year and I didn’t even start to make it until after everyone had eaten.  That’s how quickly I got it together. 
The hardest part about this entire cake was getting the sliced almonds to stick.  I was trying to tilt the cake pan up, which was doing fine, but it was a bit tedious.  I asked Andrew to help take the picture of me tilting the pan and he decided that he had a better solution and just started throwing (accurately) handfuls of almonds at the whipped topping.  Much to my surprise, it worked better.  So which ever way you choose, it could get a little messy, but I had a blast doing it with him. 

We kept going until the entire “cake” was covered, having to stop and look at where the white spots where and then finally topped with fruit.  We only did blueberries for this cake, but it would be just as amazing with blackberries or raspberries, or even a mixture of fruit, including pineapple and strawberries.  The possibilities really are endless.

We got a ton of amazing compliments from our family and friends that were at our cookout.  I have made mini versions of this when cutting up watermelons around the house.  Okay, more like just throwing some whipped topping on a slice of watermelon and shoveling it in my mouth, but still.  It’s so yummy!

Ingredients
One Watermelon
Homemade Whipped Topping Recipe, doubled
1-2 pints blueberries
6 oz sliced almonds
other fruit, optional

Directions
Cut both ends off the watermelon and lay flat like a cake.  Make a vertical slice down the rind and then cut around the entire watermelon to remove the rind.  Place watermelon on wax paper and place into the freezer for 2 hours.  Remove from freezer, place watermelon on cake carrier, and top with homemade whipped topping until completely covered. Sprinkle sliced almonds until covered and top with blueberries.  Other fruit as topping is completely optional.  Serve immediately and refrigerate what you do not consume. Serves 8-12.

*Note:  You can slice the watermelon rind and place it in a pitcher of water for a nice refreshing fruit flavor, great for cookouts.

    You guys, I can seriously vouch that this homemade cool whip is amazing. I have been drooling over it for a couple of weeks now wanting more! I love this idea of the watermelon cake! My kids would go gaga over this! What an easy idea for a cookout!
