Growing up, hot chocolate was such a special treat for us.  We didn’t get it often, but it was such a fun drink as a little kid.  I mean, my mom was agreeing to let me drink chocolate. However, her hot chocolate always came out of a paper packet and needed to be mixed with warm water or milk. Her version of homemade hot chocolate was anything but homemade. As a child, that didn’t matter.  As an adult, I have become a bit of a hot chocolate snob.

I remember the first time I had real hot chocolate not made from a packet. It was like a new awakening. Anytime I’ve had a packet of hot chocolate since then, it just isn’t the same.  Fast forward, and Andrew and I love to have hot chocolate dates.  One of our favorite things is this rich, indulgent homemade hot chocolate recipe. It’s what your homemade hot chocolate dreams are made of, I promise.

How Do you make a real hot chocolate recipe?

First, start by caramelizing sugar. Then, warm milk in a pot until bubbling (but not boiling). Next, add in real chocolate bars and and heavy cream until melted.  Finally, you add a splash of vanilla at the end.

The end result is the most decadent, rich, creamy homemade hot chocolate recipe you’ve ever had.

How do you make thick hot chocolate?

The key to indulgently thick hot chocolate is to use real chocolate bars instead of a cocoa powder and to use heavy cream.  Both of these things together leave you with a thick hot chocolate recipe that is satisfying without the use of flour or cornstarch that you may have seen in other recipes.

Ingredients
  • 4.4 oz 70% Cacao Chocolate Bar
  • 1.4 oz 50% Cacao Chocolate Bar
  • 2 tbsp sugar
  • 1 1/2 cups whole milk
  • 1 1/2 cups heavy cream
  • 1/2 tsp vanilla
  • homemade whipped topping
Instructions
  1. Roughly chop chocolate.
  2. In a heavy bottom sauce pan, add sugar and turn heat on medium low.
  3. Wait until sugar starts to caramelize, the edges will turn a rich amber color. Once all edges are this color, carefully stir.
  4. Whisk in milk.
  5. Constantly whisk for 2 minutes.
  6. Pour in heavy cream and chocolate and stir until combined and chocolate has melted.
  7. Let cook another 2 minutes until it becomes thick and creamy.
  8. Remove from heat and add vanilla.
  9. Serve immediately with homemade whipped topping
  10. *NOTE: Do not boil the milk. Small bubbles are okay, but boiling will scorch and burn your milk and then it's no longer yummy.

Whipped Cream Marshmallows

“Winter is coming…”

You don’t know how many times I’ve heard that on Game of Thrones. Immediately, I shout at the TV, “You’ve been saying that for years now!”

Well, in the real world it’s actually here (temp wise at least, technically not until tomorrow). This is my favorite time of year. I love how festive and giving everyone becomes. I love the foods and treats that only get made this time of year. I love the snow. I don’t love the cold weather, but the weather has to be cold for snow so… I guess I like that too.

Overall, it’s just a great atmosphere no matter where you go.

When I was younger, at my mom’s house, there was a church right across the street. We were in a rough neighborhood where the roads and lots were not taken care of, but as a child that was a benefit. Parts of the church’s lot would freeze over and since we couldn’t afford to go skating, my friend and I would run full speed toward the ice patch and slide on our knees across to the other side. It was so much fun until someone busted the back of there head open…. me. Of course after my head healed I went back out there again. Now that I have my girls (and can afford a helmet), all I need is a church with a messed up lot and “like father like daughters!” (SHHHH….Don’t tell Larisha)

Whenever the girls and I come in after playing, they are freezing. They fight me when I say let’s go inside because they are having so much fun. I have to wait until they start to look like icicles before I  can get them to say mercy. So typically to warm them up, I make them hot chocolate. Add some whipped cream and marshmallows and they thaw out quickly.

Skibs one day asked for snow in a cup. Guess she remembered 1 year when we scooped some up to make a icy. But since we have no snow in Jersey yet, I got an idea for something else. I couldn’t put snow in a cup but I could put a snowflake in a cup! From there the birth of the idea of this whipped cream marshmallow came to life.

You had to see there faces! You would of thought they opened a present on Christmas Day.

  • Homemade Whipped Cream Recipe
Instructions
  1. Make homemade whipped cream according to directions.
  2. Spread 1/2in thick layer on a baking sheet.
  3. Freeze until harden.
  4. Use cookie cutters to make shapes.
  5. Add to hot chocolate and watch melt!
  6. Store leftovers in freezer container.

As parents, our goal is to not only raise our children to be kind, productive humans, but we all have a goal to be around to see as much of their lives as we possibly can. We want to see them graduate from high, get married, have their own kids, be successful and so much more. Ever since we started our semi-crunchyish journey, taking better care of our health is vitally important to us for these reasons and so many more. We want to be here for them, but we also want to be able to live our own lives to our full potential.

I’m always looking for new ways to incorporate foods into our lives that are beneficial to fulling this goal in our lives. Not only that, but growing up as an extremely picky eater, I always want to try and add new foods to our diets so my own kids don’t become how I once was growing up.  Recently, a local store had pomegranates on sale. I’ve had pomegranate juice and liked it, but I’ve never ate an actual real pomegranate. I decided to grab some.

Y’all.

Why did no one tell me about the pomegranate goodness?  I’m almost upset that no one told me. Both of the girls like them too, especially the little one. I started playing around with pomegranates in different ways and recently got a brilliant idea for a morning drink. I’m super picky about what I drink in the morning.  It has to have good flavor, be healthy, and cannot be coffee or tea. Blech, I don’t know how some of you drink it everyday! After a few tries, I came up with this Pomegranate Orangeade recipe that is now my go to in the morning.

Here’s my secret. I put in Emergen-C. I personally love the fizziness to give me a wake-up call in the mornings, but I also love that it’s packed with B vitamins, antioxidants†, electrolytes plus more vitamin C than 10 oranges^. While there are over 20 different Emergen-C flavors, the Super Fruit Pomegranate variety pushes this drink over the top of the deliciousness scale. And luckily since I don’t like coffee or tea, the B Vitamins in Emergen-C enhance energy naturally* without caffeine.

Seed your pomegranate. Side note: why did no one tell me how messy pomegranates are!?

In a blender add your pomegranate seeds and orange juice.

Using a mesh strainer, separate the juice from seed remnants.

Add in Emergen-C Super Fruit Pomegranate, water, and lemon juice. Stir until well combined. Drink!

  • 1/3 cup pomegranate seeds
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 lemon
  • 1 package of Emergen-C Super Fruit Pomegranate
  • Optional: Additional pomegranate seeds and orange slices as garnish
Instructions
  1. In a blender, add pomegranate seeds and orange juice.
  2. Blend until smooth.
  3. Using a strainer, separate juice from any seed remnants.
  4. In a glass, add pomegranate mixer, water, juice from lemon, and package of Emergen-C Super Fruit Pomegranate.
  5. Stir until completely mixed.
  6. If desired, add additional orange slices or pomegranate seeds as garnishes.

Drinking this Pomegranate Orangeade makes be feel refreshed and ready to take on every morning and I hope you love it.  You can find the Super Fruit Pomegranate variety at your local Wal-greens.

Are you the type of person constantly trying to use up everything in your fridge so you have zero waste? Having to come up with something different and get imaginative with new ideas.

Well, I definitely am.

Typically Larisha and I, being the adults in the family, tend to try to consume all the food we can from certain meals we make, or fruit we buy, but sometimes there’s just so much food and we just get creative and make something out of what we have. Think Chopped, Home Edition.

So the other day I came inside and it was pretty hot in general — outside the house, inside the house, etc. Just miserable. I opened the fridge to get something to drink and it was empty besides a pitcher of water.  I saw pieces of watermelon and pulled the container out to eat a few pieces but thought to myself that I would really like something to drink.  Skibs had been asking for ice cream all day and so I decided to make something that would satisfy my thirst and her craving. Trying to win the nice dad award.

I figured I could possibly create something with the watermelon. I was thinking of a milkshake, but realized that I didn’t have the ingredients that I needed, so I thought what would be the next best thing.

I looked around the fridge and found a few things and was ready to go.  We were going to make a Watermelon Limeade Slushie. I asked Skibs if she wanted to help me make a slushie and with her confused face said “Swaushie? Ok. Let’s go.  I Mini Chef Skibbles”.  And off we went! It was the perfect treat and everyone enjoyed.  We hope you do too!

Watermelon Limeade Slushie

Ingredients
  • 4 cups fresh cubed watermelon
  • Fresh juice from two limes ~1/3 cup
  • 1/4 cup cane sugar
  • 1/8 tsp salt
  • 4 cups ice divided
Instructions
  1. In a blender, add the first four ingredients and blend.
  2. Add two cups of ice and blend again.
  3. If not slushie enough, continue adding ice until your desired consistency is reached.

Cranberry Apple Sangria Recipe with Vintage Seltzer

Vintage Seltzer Cranberry Apple Sangria

During the holidays growing up, at all of our family functions, there was soda and kool-aid.  That’s it.  You had to choose from those two options or you had to choose water. Now, I’ve had punch throughout my life, but it was never made with real fruit that I remember until meeting Andrew’s mom.  For Thanksgiving, ever year she makes a punch and a sangria.  I asked her the secret to make it taste so good and she said two things – you have to let the fruits sit for a few hours minimum and you have to add a bang. Vintage® Seltzer is what gives the bang.  You want something to make your mouth pop and this recipe does just that.  With the duo of cranberries and apples along with other fruits, it’s the perfect Thanksgiving inspired sangria recipe or a just because recipe.  Don’t drink alcohol or don’t want it around for the littles?  Don’t worry.  We’re showing you today how to make it a sangria recipe or a regular punch recipe.

What’s even better is that the punch recipe is 100% toddler approved.  I love that we have a recipe that we can make and share with our girl and feel good about her having a treat, but still getting nutrients too.  She loves getting some whole pieces of fruit to chew on!

Lastly, making a Thanksgiving or holiday tablescape doesn’t have to be difficult. Grab some fresh produce – in our case for Thanksgiving inspired, we chose pumpkins and apples.  If you were making this for Easter, for example, you could do oranges and strawberries.  Adding a bowl of wedged limes and lemons is always a great addition as well.  Putting a small box under your tablecloth to add height and dimension. You’ll have the perfect tablescape to show off to your guests.

Cranberry Apple Sangria Recipe with Vintage Seltzer

Ingredients
  • 3 cups Vintage Seltzer we used Raspberry Lime
  • 4 cups Red wine or Cranberry Apple Juice if making Non-Alcoholic
  • 1 cup blueberries divided
  • 1 cup orange juice
  • 3 limes 1 juiced and 2 sliced thinly
  • 2 oranges sliced thinly
  • 1 large fiji or other sweet apple, cubed
  • 1 cup cranberries
Instructions
  1. In a blender, blend orange juice and 1/4 cup of blueberries until well blended.
  2. Pour into pitcher or punch bowl.
  3. Add the wine or juice to the bowl, along with the remaining blueberries, lime juice, sliced limes, sliced oranges, cranberries and cubed apple.
  4. Using a wooden spoon, stir together.
  5. Let sit for a minimum of 4 hours, but no more than 8 before serving.
  6. Right before serving add in the Vintage Seltzer in order for the fizz to stay around
