These Chocolate Chip Popcorn Ice Cream Sandwiches are the must have treat of the summer. Perfectly sweet & fun for everyone no matter your age! A perfect chocolate dessert for summer. 

You’ve never had an ice cream sandwich like this. These Chocolate Chip Popcorn Ice Cream Sandwiches are literally dessert perfection. 

Salty and sweet are the perfect combo, especially when it comes to dessert.  This combo of salty popcorn plus sweet cookies, ice cream and chocolate are literally a match made in heaven.  It may be an unlikely pairing and one you’ve never thought of, however, once you try it, you will wonder why you’ve never tried it before!  

Another reason this is a great reason is that kids will go nuts over making it.  Kids love making popcorn. Whether you make it on the stove or in your microwave, the pops send them in a gigglefit every single time. 

Then, you’re combining popcorn with chocolate, putting ice cream between two cookies, and then putting them all together. 

What ingredients do you need to make Chocolate Chip Popcorn Ice Cream Sandwiches?

  • Popcorn 
  • Vanilla Ice Cream
  • Chocolate bar
  • Chocolate Chip Cookies

That’s it!  These four ingredients are all you need to make these delicious ice cream sandwiches.  They do take a little bit of time to make, but it’s perfect for a fun project once the kids are off school! 

How do you make Chocolate Chip Popcorn Ice Cream Sandwiches?

You’re going to make these in batch processes.  First, you need to make your popcorn according to the instructions.  Depending on if you are making this in a bag or with kernels on the stove will depend on how you make.  You want to choose a non-buttered popcorn to work best for this recipe.

Once you have your popcorn made, you need to reserve approximately 2 cups of the popcorn.  With the remaining amount, feel free to eat it, make a popcorn necklace, or anything else. 

In a microwave safe bowl or double broiler, melt the chocolate bar down.  Dip your cooked popcorn into the chocolate, then place on a wax lined baking sheet. Freeze for 20 minutes. 

Take one large scoop of ice cream and place it between two chocolate chip cookies.  Then, push the chocolate coated popcorn into the sides gently. 

Serve them immediately or place in an air tight container in the freezer until ready to serve.  Good for about 2 months. 

Can I prep these chocolate chip ice cream sandwiches ahead of time?

Absolutely! Make the recipe as directed and instead of immediately serving store in an air tight container in the freezer for up to two months.  Eat one at a time or serve all together.  It’s best to take out 5-10 minutes before serving. 

Can I make these vegan or allergy friendly ice cream sandwiches?

As parents, we are fully aware of food allergies and preferences and are working to make our recipes inclusive for everyone. With that, we are happy to say that you can totally make these vegan or allergy friendly ice cream sandwiches. 

You can purchase or make allergy friendly chocolate chip cookies. As well as purchasing or making non-dairy popcorn. We like to pop our own kernels in a little bit of oil and use from there.  Our go to Top 8 Free chocolate is Enjoy life.  Just melt down 1/2 cup of chips in the same process as using the bar in the original recipe.  And lastly, swap with a non-dairy, allergy safe ice cream. Even a banana nice cream would work, it would just have a banana taste. 

Follow the recipe instructions as written and you’ll have food allergy safe ice cream sandwiches!

Ingredients
  • 2 cups cooked popcorn
  • 1 quart vanilla bean ice cream
  • 4 oz baking chocolate bar
  • 12 chocolate chip cookies
Instructions
  1. Make popcorn according to instructions on bag or container using. Cool.

  2. In a microwave safe bowl or double broiler, melt chocolate bar down.

  3. Dip popcorn into chocolate and place on wax lined baking sheet.
  4. Freeze for at least 20 minutes.
  5. Take one scoop of ice cream and sandwich it between two cookies.

  6. Push popcorn gently into sides of ice cream.
  7. Serve immediately or place on a baking sheet and into freezer until ready to serve.
  8. Store any leftovers in freezer safe container up to 2 months.

Errr???? Freeze.  Excuse me?  How do you form your lips to speak that?  I will never understand.  My only exception is anything mint. Keep that away from my taste buds. But seriously, how do you just not like ice cream as a whole being. There are endless possibilities to flavor combinations and delicious toppings and cones and oh my gosh how do you not like ice cream.

A few years ago, we got an ice cream maker, but only attempted to make chocolate ice cream from the book it came with. I was tired of another appliance sitting around not being used, so I decided to sit down with Scoop Adventures: The Best Ice Cream of the 50 States, and try out some of their delicious ice cream flavors. There are over a hundred recipes and I had no clue where to even start.

Homemade Peanut Butter and Jelly Ice Cream

I quickly turned to see what New Jersey and West Virginia had to offer since they are closest to my heart.  New Jersey features Sweet Basil Ice Cream from The Bent Spoon in Princeton, New Jersey. And, West Virginia features Pink Panther Ice Cream, a recipe adapted from Ellen’s Home Ice Cream in Charleston, West Virginia. Neither of them sounded exactly like something everyone in our family would like so I asked Andrew to pick. He said, “Peanut Butter and Jelly Ice Cream”.  It sounded amazing and weird all at the same time, but I was going for it.

The first time we made this homemade ice cream recipe, we stayed pretty true to the recipe in the cookbook. However, that’s not really my style and I immediately knew how I would change it up the next time around. The kids loved this peanut butter and jelly ice cream recipe and Andrew and I both agreed it would be a hit with some slight changes. It literally tastes like you are eating a peanut butter and jelly sandwich but mixed into deliciously churned homemade ice cream.

How to Make Homemade Peanut Butter and Jelly Ice Cream

Ingredients
  • 1 1/2 cups whole milk divided
  • 1 3/4 cups heavy cream
  • 2/3 cup sugar
  • 1 tbsp cornstarch
  • 1 cup unsalted peanut butter divided
  • 3/4 cup grape or strawberry jam
  • chopped peanuts optional
Instructions
  1. Fill a large bowl with ice water. Set aside. In a small bowl, combine 2 tablespoons of the milk with the cornstarch, whisk, and set aside.  Whisk the peanut butter and salt in a medium bowl and set aside.

  2. In a small bowl, combine 2 tablespoons of the milk with the cornstarch, whisk, and set aside. 

  3. In a medium bowl, add 1/2 cup peanut butter and set aside.

  4. Combine the remaining milk, heavy cream and sugar in a medium saucepan and place over medium heat.  Bring the milk mixture to a low boil.  Cook until the sugar dissolves, 3 minutes.

  5. Remove from the heat and gradually whisk in the cornstarch mixture. Return to a boil and cook over moderately high heat until the mixture is slightly thickened, about 1 minute. 

  6. Pour into the bowl with the peanut butter and whisk until smooth. It will looks like tiny peanut butter pieces throughout.  

  7. Set the bowl in the ice water bath to cool for 20 minutes. Whisk together. Then, cover and refrigerate until well chilled, at least 4 hours or overnight.

  8. Once chilled, pour the ice cream based into an ice cream maker and churn according to the manufacture's instructions.  

  9. Spoon a small layer of jam into a freezer-safe container. Then, lightly spoon a layer of ice cream on top. Drop 1/2 tsp globs of peanut butter on top and use the tip of a knife to carefully swirl it around. Continue to alternate layers of jam, ice cream, and peanut butter until the container is full. Freeze until firm, at least 4 hours.

  10. Optional: Add chopped nuts to the layers for an added crunch or use them on top.

A few weeks back we made a Caramel Banana Ice Cream.  It was heaven.  H-E-A-V-E-N!

Problem – Ice cream actually takes a pretty long time to make.

While I prefer making as much as I can from scratch so I can control our ingredients, I really don’t like things that take a lot of time.  I mean, really, do any of us? There’s the whole instant gratification part of us, but also there’s the whole, I have a bajillion other things to be doing.  Waiting almost 24 hours for ice cream, isn’t really what I want to be doing.  And lastly, trying to explain to a toddler that we are making ice cream but it won’t be ready until tomorrow, is just setting yourself up for a huge meltdown.  And ain’t nobody got time for that.

I need something for those hot summer days that we come inside and can instantly have something within a few minutes to cool us off.  While we typically have ice pops on hand, sometimes we forget to make more before we run out. I mean I am human! HAHA.

What is Nicecream?

Nicecream is vegan ice cream made by blending up frozen bananas. Once you have the banana base, you can work on adding in toppings, sauces, and other ingredients to spin it into your favorite ice cream made from bananas.

Our favorite banana nice cream recipe is split between the one you are reading here and our Banana Swirl nice cream with strawberry sauce swirled into the nice cream recipe. Both of these healthy ice cream recipes are sure to please anyone!

What’s the best Nice Cream Recipe?

We almost always have frozen bananas in the freezer so it’s a quick and easy one to throw together. You can flavor the bananas with almost anything or just eat the whipped bananas by themselves. Chocolate and Peanut Butter together are the perfect combination so we are big fans in thinking this Chocolate Peanut Butter Banana Ice Cream recipe is the best nice cream recipe around .

  • 4 Frozen Bananas

  • 2 tbsp 100% Cacao Powder
Instructions
  1. Set Bananas out for 15 minutes to slightly thaw.

  2. Add ingredients to high powdered blender or food processor and blend for 5 minutes, scraping down as needed, until a thick, creamy consistency is achieved. 

  3. Serve immediately or store in air tight container in freezer. 

Recipe Notes

If you are having trouble blending completely, you can wait a few minutes for bananas to thaw a bit more or add a splash of milk (dairy or dairy free) until it will blend well.

Banana Swirl Ice Cream

I remember when we had our first baby.  I was OBSESSED with whether or not she was meeting her milestones. Anytime like I felt she was falling behind on something, I panicked.  I would ask the same question in all 3,421 Facebook parenting groups I’m a part of and they would all tell me the same thing, “Breathe.”

Thankfully, I was just being a first-time parent in all of the circumstances I presented. It’s important that while milestones are critical, hitting all of them exactly the second they turn 3, 6, or whatever corresponding age bracket, isn’t always going to happen.  Much to my friend’s pleasure, I calmed down a bit with my second child. I realized that sometimes she would hit things much earlier than projected, while other things took a few more weeks. And that was okay. What is important is to find reputable sources of information on developmental milestones and keep tracking your child’s progress.

CDC’s “” program offers developmental milestones that most children should reach by different ages. What’s great about this campaign is that parents can now know exactly which milestones their children should be reaching from birth to age 5 years old.

The “” program is geared towards early identification of children with developmental disabilities, including autism.  By detecting these concerns early, children and families are able to get the services, as well as the support, they need. Each milestone age gives targets for how your child should play, learn, speak, act, and move. By watching and tracking your little’s development, you are able to quickly act if something is not on track.

We recently hit the , and are now gearing towards the 2 year old ones.

Some of the 18 month milestones she has been reaching are:

  • May have temper tantrums
  • May be afraid of strangers
  • Says and shakes head “no”
  • Knows what ordinary things are for; for example, telephone, brush, spoon
  • Scribbles on her own
  • May walk up steps and run
  • Drinks from a cup
  • Eats with a spoon
  • and ..


       

One of my favorite milestones from this age was her learning to really use a spoon.  Mostly, because it meant that there was less mess to clean up. Don’t get me wrong, there are still messes and accidents, but her learning to use a spoon has helped so much.

Today, I wanted to share one of my favorite treats to make at this age is Banana Swirl Ice Cream.

Now, I know what you may be thinking.  Ice Cream at 18 months!? This isn’t healthy! But SURPRISE!  This Banana Swirl Ice Cream has just 3 ingredients, helps to meet the daily fruit serving size AND helps with teething. SAY WHAT!?  It’s true.  Frozen foods have always helped my girls when teething and these last teeth they get between 12-24 months are always the hardest in our house. It also helps with teaching them spoon skills.  What kid won’t practice spoon skills for some ice cream! 😉

Here’s the recipe for Banana Swirl Ice Cream

Banana Swirl Ice Cream

Ingredients
  • 6 large bananas
  • 2 cups frozen strawberries
  • 3 tbsp water
  • Chopped Walnuts Optional
Instructions
  1. On a baking sheet lined with wax paper, chop up bananas into large chunks and spread across sheet.
  2. Place in the freeze until harden.
  3. Meanwhile, place frozen strawberries and water in a suacepan and heat over medium heat.
  4. Stir often until the strawberries break down.
  5. Using a sieve, separate the strawberry juice from the pieces.
  6. Set juice aside and let cool. *You can throw away or compost the pieces.
  7. Once bananas are frozen, place in a food processor and pulse until the consistency of ice cream.
  8. This takes about 3 minutes and you may have to scrap down the sides of your food processor.
  9. Pour ice cream into a bowl and swirl in the strawberry juice.
  10. Serve immediately or place back in freezer until ready to use in an air tight container.

Homemade Fried Ice Cream

Growing up in a small town in West Virginia, we had two restaurants options –a pizza place and a Mexican restaurant. Anything else, we had to go “in to town” to have for dinner. Every time we went to the Mexican restaurant I would beg my parents for the fried ice cream. I remember asking the waiter to tell me how to make it every time. They never would. It was this delicious ball of ice cream, engulfed with a warm, crunchy coating, and then topped with whipped cream, sprinkles, and a cherry. It was delicious.  I could easily eat the entire thing by myself even after stuffing myself with unlimited chips and salsa and consuming a ginormous plate of pollo asado, rice, and beans. I’ve learned since that your brain will always make room for dessert. I believe it.

I actually haven’t had fried ice cream in a long time and one day Andrew and I were talking about it recently. He didn’t understand how ice cream could be fried. I was still stuck on the fact that he had never had it in his life.  I mean fried ice cream is one of those things that you must absolutely have at a minimum of once in your life. It’s just that amazing.  So, naturally, we had to figure out how to make fried ice cream at home and it was surprisingly way easier than either of us could have initially imagined.

These past few weeks have been insanely hot leaving us to try to beat the heat in as many ways as possible. I’ve been using the crockpot or grill instead of cooking inside, only washing clothes late in the evening, going swimming, and of course sweet, cooling treats like Blue Bunny® ice cream.

We recently drove over to our local Walmart and grabbed some of Blue Bunny®’s brand new clear packaging.  We love that you can see the flavor swirls throughout the whole packaging. We allowed our toddler to pick out one flavor and she chose Blue Bunny® Banana Split. We also grabbed Blue Bunny® Peanut Butter Party and Blue Bunny® Butter Pecan.  Y’all.  This ice cream is the bomb.com. I almost feel like being able to see the flavor swirls made it taste better.  It’s a total mind trick.  We grabbed some Smucker’s ice cream toppings for an inexpensive way to add in some fun! But the best was making fried ice cream.

Homemade-Fried-Ice-Cream

Once you have your Blue Bunny® ice cream choices, you just quickly scoop out on a waxed paper lined baking sheet and throw in the freezer. After two hours, roll around in the corn flake mixture, and freeze overnight. Then throw in the deep fryer and serve!  It’s really that easy.

You’re then left with delicious soft, cold ice cream wrapped around a crunchy, deep fried delicious mixture of goodness.  For a brief few moments, all life’s problems are solved while you eat this and you definitely beat any heat that you’re feeling from Mother Nature.

Ingredients
  • Favorite quart of Blue Bunny® ice cream
  • 3 cups corn flakes crushed
  • 1 tbsp cinnamon
  • 1 tsp brown sugar
  • vegetable oil for frying
  • Smucker's toppings optional
  • Keebler waffle bowls optional
  • Homemade Whipped Topping Recipe optional
Instructions
  1. Line a baking sheet with wax paper.
  2. Scoop out ice cream into 3 inch balls.
  3. Place in freezer for two hours.
  4. In a shallow dish, combine crushed corn flakes, cinnamon, and brown sugar.
  5. Place back on wax lined sheet and place back in the freezer overnight.
  6. *Optional: If not frying right away, place in a sealed bag until ready (up to 3 months).
  7. Heat deep fryer to 375 degrees.
  8. Once temperature is reached, drop balls, one at a time, into the oil for 15 seconds.
  9. Serve immediately in a Keebler waffle bowl or regular bowl.
  10. Top with Smucker's toppings or homemade whipped topping if desired.

Caramel Banana Ice Cream

In all honesty, I can’t remember many details about a lot of my childhood. Sometimes I’m not sure if what I’m recalling are memories told to me or if they are me actually recalling them. However, I very vividly remember going to my great-grandmother’s house for big holidays and having these huge dinners with the entire family present. I’m talking 40-50 people, tables set up in 3 different rooms. We’d be there for hours. As a kid, certain parts were so much fun — always knowing at Easter there would be money in our Easter baskets, sneaking candy out of the candy tray on the counter, or hiding inside the tiny secret closet in the bathroom. Of course, there were some not so fun things – only being able to watch what grandpa had on TV (usually football or The Lawrence Welk Show) is an example. However, not much compares to the memory of being able to watch…and ultimately, eat…homemade, hand-churned ice cream. I used to look in the freezer when we got them to see if it was ready or not. If it wasn’t, I would run out to the barn and see if “the guys” we’re hanging out there churning it and see if I was strong enough yet to churn it myself.

While we aren’t hand-churning ice cream here, making homemade ice cream with my girls is one of my most favorite things. The possibilities are endless and the joy on Skibbles face as she eats one of her favorite foods that she actually made is priceless.  Here’s the ice cream maker that we use.

This homemade caramel banana ice cream is so perfect that you don’t need much more to get you through the summer.  It’s amazingggg. We all licked the container on this one.  There was no going to waste here.

Caramel Banana Ice Cream

Ingredients
  • 3 ripe bananas cut into 1/2 inch pieces
  • 1/4 cup brown sugar
  • 1 tbsp unsalted butter cut into pieces.
  • 2 1/2 cup whole milk + 2 tbsp divided
  • 1 tbsp cornstarch
  • caramel sauce recipe
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 tsp lemon juice
  • pinch of nutmeg
Instructions
  1. Preheat oven to 400 degrees.
  2. In baking dish, add bananas, 1/4 cup brown sugar, and 1 tbsp unsalted butter.
  3. Bake for 40 minutes.
  4. Once bananas are done baking, move onto the following.
  5. In a small bowl, combine 2 tbsp milk, and 1 tbsp cornstarch. Set aside.
  6. Fill a large bowl with ice water. Set aside.
  7. Make the caramel sauce recipe in a saucepan.
  8. Once ready, over medium heat, add 1 1/2 cup milk.
  9. Boil for 3 minutes.
  10. Remove from head and add the cornstarch mixture.
  11. Return to heat and thicken for 1-2 minutes.
  12. In a blender, add banana mixture, caramel mixture, 1/4 tsp salt, 1/2 tsp vanilla, 1 tsp lemon juice, and a pinch of nutmeg.
  13. Pour into a medium bowl and put in ice bath for 20 mins, whisking occasionally.
  14. Cover and refrigerator for at least 4 hours (overnight preferred)
  15. Remove from fridge and add 1 cup of milk until well combined.
  16. Churn in ice cream maker according to directions.
  17. Freeze until firm (at least 4 hours).
  18. Serve! Top with walnuts if desired.

Semi-Homemade Ice Cream Pops

I think I could live on ice cream during the warmer days of spring and throughout the summer.  With a heat wave currently happening and me VERY pregnant, it’s become even more of a necessity in my life.  Not to mention Skibbles has embraced the full blown toddler love of ice cream herself.  I think she asks for at least 5 times every day. We have a local ice cream shop a few minutes down the road from our house and she even knows where that is and belts out “ICEEEE CREAMMMM” every time we pass by there.

While I love to support local businesses the cost can really add up, so I’m thankful that I can grab amazing tasting Blue Bunny ice cream while I’m grocery shopping at Wal-mart.  Andrew and I love making sundaes with different toppings for ourselves, which got me thinking that it would be fun to make popsicles with Skibbles.  While we were in the kitchen, I couldn’t help but feel like it was an episode of Sandra Lee’s Semi-Homemade.  I love how easy it was to make this DIY Semi-Homemade Ice Cream Pops.

The recipe is super easy.  You can make it how we did or grab your favorite toppings yourself and add them in.

What you need: 

  • Blue Bunny Ice Cream – Homemade Vanilla is AMAZING
  • Toppings
  • Popsicle Molds

We used fresh raspberries and blueberries as well as white and milk chocolate chips.  The fresh berries are the perfect way to add a little extra nutrition in to a sweet treat for your little ones.

How to Make: 

  • Let ice cream soften (I decided to nuke ours in the microwave for a minute to make them faster)
  • In a bowl, Combine 1 1/2 cups Blue Bunny Homemade Vanilla ice cream with 1/2 cup fresh berries and 1/4 cup chocolate chips (you can add the chips whole or melt them first)
  • Pour into your popsicle molds
  • Let freeze for 4-6 hours (or until hardened) then serve!
