Turkey Cheese Apple Sandwiches are your kids next favorite lunchbox idea.  By now they are tired of everything you’ve been offering them all year.  They got a winter break and then you likely were right back to the same ideas. They’ve only been back for a few weeks this year and they are already complaining.

Not only are these unique and you likely haven’t tried them yet, but there are endless possibilities.  While we focus on Turkey Cheese Apple Sandwiches here, you could easily recreate with ham, chicken, roast beef or another meat. You can switch up the cheese you use too!  Turkey goes great with a mild cheddar, but with chicken and gouda apple slice sandwich would be amazing.

We used Lil Snappers Pink Lady apples.  Not only are pink lady apples crisp and sweet, but Lil Snappers are made specifically for kids for their small size. Toss an apple into their lunchbox for school, and then use them again in this recipe for an after-school snack. Or reverse it and use these in their lunch box and through them an apple and peanut butter or hummus for that after-school snack. Lil Snappers also makes pears and oranges in kid-sized portions. They still meet one size serving of fruit for your family’s daily requirements.

Can you make Apple Slice Sandwiches ahead of time?

Absolutely!  The key to making these ahead of time is that you rub each side of the apple slices with lemon juice.  The acidity in the lemon prevents apples from browning.  You can make these these at least 12 hours in advance without worry. Beyond that, you want to ensure that you are using a very crisp apple like Lil Snappers Pink Lady apples. Using a softer apple, it will start to turn mushy after 12 hours. Pink Lady apples can be made 24 hours in advance.

Cheesecake is one of my favorite treats. Sometimes though, I don’t want to go through the entire process of making and baking an entire cheesecake. It’s exhausting. Plus, with the girls, I’m always trying to figure out ways to incorporate them into the kitchen to make their own recipes that are great for their size.

Mini sized treats for them mean that this no bake cheesecake bites recipe is the perfect mini desserts to take to your next party or get together you’re attending. No matter where you are going (shoot, even if you are just staying home and going to devour them all to yourself), they are sure to be a hit with everyone. Bite sized treats are the perfect way to go when you are requested to bring a dessert.

How do you make a cheesecake without a springform pan?

One great way to make a cheesecake without a springform pan is to make these mini no bake cheesecake bites recipe.  There’s no need to have a springform pan (or any other pan) making prep, baking, and clean up time a breeze.

They are super simple to make just using a basic no-bake cheesecake recipe and adding powdered sugar to make it thicker and hold its shape. Then, rolled in your choice of sprinkles.  Use flavored sprinkles to enhance the type of cheesecake bites you are making, like our chocolate mint ones here.

Ingredients
  • 4 oz cream cheese 1/2 a block
  • 1/4 cup butter softened (1/2 a stick)
  • 1/4 tsp vanilla
  • 1/4 tsp lemon extract
  • 1 cup powdered sugar
  • *Desired Toppings - sprinkles flavored or not, chocolate chips, etc
Instructions
  1. In a large bowl, cream together cream cheese and butter for 4 minutes.
  2. Add in vanilla and lemon extracts just until combined.
  3. Add in powdered sugar and stir until well mixed together.
  4. Place bowl into the freezer for 30 minutes to slightly harden.
  5. Using a one-inch scoop, scoop out balls of the mixture and place on a wax lined baking sheet.
  6. Place into the fridge for one hour.
  7. Then roll into sprinkles or other desired topping.
  8. Serve immediately or store in an air tight container for up to 7 days.

Frozen Fruit and Yogurt Popable Bites

This Frozen Fruit and Yogurt Popable Bites are the perfect kid’s summer treat!

Growing up, the summers meant lots of fun!  One of the best things was the almost endless amount of ice pops and other frozen treats that we were allowed to consume.  I remember whenever we went to my grandparent’s house, we got these ginormous ice pops that took forever to eat.

Naturally, my girls love frozen treats too.  What I love is how easy it is to make homemade frozen treats. Kids literally don’t care what you put inside a frozen treat either.  It’s the perfect opportunity to stuff in a ton of fruits or vegetables and get in their daily allotment of nutrients.  One of the girls favorite ice pops are a combination of avocado and banana.  Seriously!

What I don’t like as a parent though, is that any variation of ice pops have a tendency to get a little messy, especially if it’s hot outside.  They start dripping.  Things get sticky. And often, the kids don’t even want to finish the entire ice pop which is frustrating as we try to limit the waste we have.

Kids are still getting a delicious frozen treat that’s healthy for them, but they can just pop them in their mouth and eat them within seconds, minimizing the mess and the waste. It’s a win, win for everyone. Plus they are super easy to make. Our girls loved making them almost entirely by themselves.

Frozen Fruit & Yogurt Popable Bites

Ingredients
  • 1 cup frozen strawberries
  • 1 cup frozen mixed berries
  • 1 cup vanilla Greek yogurt
Instructions
  1. Let frozen berries, slightly unthaw.
  2. Chop with a knife into tiny pieces.
  3. Combine chopped mixed berries and chopped strawberries together in a bowl.
  4. Inside silicone mold, layer berry mixture, then yogurt.
  5. If any berry mixture is left over, top yogurt with remaining mixture.
  6. Place in freezer for 4 hours or until frozen solid.
  7. Serve immediately or pop out and store in air tighter container in freezer for up to 2 weeks.

Tip:  Empower your kids by letting them cut things on their own.  These amazing kid’s knives are what we are using in the video. They are sharp enough to cut the food, but they can’t cut your child.  The girls love asking for their knives to take control themselves in the kitchen!

Banana Swirl Ice Cream

I remember when we had our first baby.  I was OBSESSED with whether or not she was meeting her milestones. Anytime like I felt she was falling behind on something, I panicked.  I would ask the same question in all 3,421 Facebook parenting groups I’m a part of and they would all tell me the same thing, “Breathe.”

Thankfully, I was just being a first-time parent in all of the circumstances I presented. It’s important that while milestones are critical, hitting all of them exactly the second they turn 3, 6, or whatever corresponding age bracket, isn’t always going to happen.  Much to my friend’s pleasure, I calmed down a bit with my second child. I realized that sometimes she would hit things much earlier than projected, while other things took a few more weeks. And that was okay. What is important is to find reputable sources of information on developmental milestones and keep tracking your child’s progress.

CDC’s “Learn the Signs. Act Early.” program offers developmental milestones that most children should reach by different ages. What’s great about this campaign is that parents can now know exactly which milestones their children should be reaching from birth to age 5 years old.

The “Learn the Signs. Act Early.” program is geared towards early identification of children with developmental disabilities, including autism.  By detecting these concerns early, children and families are able to get the services, as well as the support, they need. Each milestone age gives targets for how your child should play, learn, speak, act, and move. By watching and tracking your little’s development, you are able to quickly act if something is not on track.

We recently hit the 18 month milestones, and are now gearing towards the 2 year old ones.

Some of the 18 month milestones she has been reaching are:

  • May have temper tantrums
  • May be afraid of strangers
  • Says and shakes head “no”
  • Knows what ordinary things are for; for example, telephone, brush, spoon
  • Scribbles on her own
  • May walk up steps and run
  • Drinks from a cup
  • Eats with a spoon
  • and more...


       

One of my favorite milestones from this age was her learning to really use a spoon.  Mostly, because it meant that there was less mess to clean up. Don’t get me wrong, there are still messes and accidents, but her learning to use a spoon has helped so much.

Today, I wanted to share one of my favorite treats to make at this age is Banana Swirl Ice Cream.

Now, I know what you may be thinking.  Ice Cream at 18 months!? This isn’t healthy! But SURPRISE!  This Banana Swirl Ice Cream has just 3 ingredients, helps to meet the daily fruit serving size AND helps with teething. SAY WHAT!?  It’s true.  Frozen foods have always helped my girls when teething and these last teeth they get between 12-24 months are always the hardest in our house. It also helps with teaching them spoon skills.  What kid won’t practice spoon skills for some ice cream! 😉

Here’s the recipe for Banana Swirl Ice Cream

Banana Swirl Ice Cream

Ingredients
  • 6 large bananas
  • 2 cups frozen strawberries
  • 3 tbsp water
  • Chopped Walnuts Optional
Instructions
  1. On a baking sheet lined with wax paper, chop up bananas into large chunks and spread across sheet.
  2. Place in the freeze until harden.
  3. Meanwhile, place frozen strawberries and water in a suacepan and heat over medium heat.
  4. Stir often until the strawberries break down.
  5. Using a sieve, separate the strawberry juice from the pieces.
  6. Set juice aside and let cool. *You can throw away or compost the pieces.
  7. Once bananas are frozen, place in a food processor and pulse until the consistency of ice cream.
  8. This takes about 3 minutes and you may have to scrap down the sides of your food processor.
  9. Pour ice cream into a bowl and swirl in the strawberry juice.
  10. Serve immediately or place back in freezer until ready to use in an air tight container.

Chocolate Peanut Butter No Bake Cookies

Chocolate Peanut Butter No Bake Cookies.

Chocolate plus peanut butter has to be one of our household’s favorite combinations.  Especially, our girls. The girls have been asking to make cookies recently, but I didn’t feel like baking them. Then, I remembered a no bake recipe I’ve made in the past.  Taking one bite of these chocolate peanut butter no bake cookies will leave your mouth full of deliciousness. The fact that kids can make these pretty much on their own is another added bonus. I’m constantly looking for ideas to let the girls explore in the kitchen and expand, not only their taste buds, but their love of cooking and enjoying treats that are healthy for them.

These no bake cookies are packed full of protein, so they are the perfect treat for high energy summer days where your kids have been going full steam.

I know, for us, many summer days are spent swimming for hours on end, which means they need to have energy to keep up. These chocolate peanut butter no bake cookies do just that. I’m also hoping to get out more this summer and explore some hiking trails and lakes local to us. That’s something we have never done but I’m really excited to try it as a family. We recently found a local park that allows you to rent canoes, so we would really like to do that too. I’ll be making sure that I pack some of these treats with us for whatever we do this summer!

This recipe is super simple.  It’s just eight ingredients and while a stove is involved, it’s still just a little help needed on your own. You can make them as thick or thin as you want. In a time crunch, throw them in the fridge to harden faster. Keep in fridge to up to 5 days in air tight containers.

Chocolate Peanut Butter No Bake Cookies

Ingredients
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 stick butter
  • 3 cups oats
  • 1 cup PB
  • 2 tsp vanilla
  • chocolate chips
Instructions
  1. Line sheet with wax paper.
  2. heat sugar, milk, butter and honey until butter is melted. Boil for 90 seconds.
  3. Add in PB, oats, and vanilla.
  4. Fold in chips and cranberries
  5. Using spoon, drop cookies onto prepared baking sheets. Flatten to round cookies
  6. Set 30 mins before serving.
  7. Air tight container for 3 days

10 Activities to Do in the Rain with Kids

This week has been crazy.  I don’t know what’s going on, but the kids and I haven’t been meshing well.  I know Mercury was in retrograde, the 4.5 year old has been testing her limits, my anxiety has been up, etc. It has really made for an unpleasant week. We were supposed to have a park date with friends today, however, it was cancelled when rain was in the forecast. Then, I got a brilliant idea. Let the kids go play in the rain.  I know how I felt about playing in the rain when I was little. It’s amazing! There’s something about doing an activity you usually aren’t allowed to do that makes it so much more fun. Instantly, all our problems were solved. You would have thought I bought a bajillion pack of Shopkins. The girls were both so excited.

The crazy thing is, we didn’t even do anything spectacular.  I just let them play how they normally would outside when it wasn’t raining.  I tied our homeschool lesson for the day into our outside play and we talked about precipitation and what happens when the weather is warm vs. cold when the clouds get full.

As soon as we were outside, my mind started spinning about how we could make this even more fun as our kid’s get older.  What could be some other activities to do in the rain with the kids?

10 Activities to Do in the Rain with Kids

  1. Jump in Puddles
    • Naturally!
  2. Have a race down the slide
    • use either a timer or dual slides at a park
  3. Play in the mud
    • Kids LOVE getting dirty. You can make mud pies or just play in the mud. Just hose them down at the end so not much makes it inside.
  4. Sing & Dance
    • Our littles loved singing the Lemondrops & Gumdrops Rain Song and Dancing around
  5. Play favorite sports game
    • Whether it’s tossing a football, throwing a frisbee, or kicking a soccer ball, it leads to even more exciting laughter when rain is involved
  6. Play tag
    • Who wouldn’t want to play tag in the rain?  It’s going to get messy, but that’s even more fun
  7. Paint artwork
    • I’m most excited to do this one. The raindrops will create a unique painting that’s both fun and a learning experience
  8. Go for a walk
    • It’s fun to do this one because it could be sprinkling one minute or pouring the next. It’s a fun adventure for all
  9. Water balloons and water guns
    • I mean you’re already going to get wet! Enhance the experience by having even more fun!
  10. Follow the rain
    • Where does the rain go? Why do puddles form?  By following the rain, you can answer these questions and more to your little inquisitive minds

Apple Cookies Four Ways

Looking for a quick and simple snack for warm weather days? You’ll want to make these apple cookies! 

The girls are constantly go, go, go. With the weather warming up, we are already finding ourselves outside more. They are running around, playing frisbee, and seeing who can go faster down the slide.  Storm loves to swing, while Serenity is constantly pushing herself to learn the monkey bars. While they are running around and playing, they stop and notice the yellow dandelions in the yard. I use this as a learning experience to teach them the life cycle of a dandelion. Explaining to them how it goes from vibrant yellow to a white puffy flower and every time that they blow on that flower they create a new yellow flower. Serenity’s mind was blown. When we came inside and I found some cool time-lapse videos online of the process. It was amazing!

It was also time for a snack.

In the summertime, I love letting them explore with food. We take toppings outside to the table and let them go to town on creating their own unique flavor combinations. It’s really crazy to see the unique flavors the come up with on their own.  Ones that you wouldn’t think necessarily go together, yet they do.

One of their new favorite things to make are these apple cookies.

It’s such a simple and quick snack to make and they get to be the creators of their own imagination. Plus, telling your kids it’s a “cookie” if guaranteed to at least get them to try it. It almost feels funny calling this a recipe because there isn’t much too it, but that makes it even better for you!

First, core and slice your favorite apples (granny smith works great for these!). Then, spread a “butter” and add toppings.  We’ve spread peanut butter, cookie butter, chocolate hazelnut butter, almond butter, caramel, and more. Toppings we’ve done include all types of nuts and dried fruits, chia seeds, pretzels, chocolate chips, and more. The possibilities are really endless. Here’s four of our favorite combinations-

Coconut Peanut Butter Banana Bites

Both of my kids beg for bananas. Great, right?  I used to think so too. There’s so many great nutrients in a banana.  One large banana yields 20% of the daily Vitamin C and 25% of the daily Vitamin B6, a great source of fiber, helps with digestion, and a great source of potassium and magnesium.  Who doesn’t want their kid eating bananas?  But lately, they both take like three bites of the banana and then bring it to me and say they are done?  Umm, nope. What’s that saying?  Fool me once, shame on you.  Fool me twice, shame on me.  Except, they’ve fooled me about fifty-eleven times now.  Up until recently, when I was like nope, no more bananas.

Of course, they keep asking. I needed to figure out a way that we could all be happy. I didn’t want to waste food (or feel like I needed to eat the leftovers–come on we all know moms eat the leftovers because we feel bad about wasting food). 

Insert these Coconut Peanut Butter Banana Bites.  It’s a way for me to not only split one banana between both of the girls, but I can also freeze whatever they don’t eat for later, thus always having a fun snack on hand all the time.  It’s a win/win for everyone.

On top of all of that, it’s something that our 4 year old can make completely on her own. She knows how to peel a banana, use can cut it using our nylon kid safe knives, spoon the peanut butter, and top with coconut. Voila! Done! The 1 1/2 year old has a little bit of work to do before she’s ready to make these on her own.  When she was done (as you can kind of see in the video below) it just looks like it’s supposed to be a topping of some sort. Either way she was happy with her progress.

  • 1 banana
  • peanut butter or alternative butter
  • shredded coconut
Instructions
  1. Cut banana into desired size chunks
  2. Spoon peanut butter on top of the bananas.
  3. Top with shredded coconut.
  4. Freeze for 15-20 minutes.
  5. Serve immediately.
  6. Store any leftovers in an air-tight freezer container in the freezer.

Lesson 12: Having Fun with Kids in the Kitchen

Today’s lesson isn’t necessarily a lesson, but as we come to a close for the end of the year with our lessons (don’t worry, The Seasoned Kids will be back in 2017 – just without lessons) we realized we never talked about the number one tip when getting in the kitchen with your kids.

Have fun!!

That’s right. None of our previous lessons mean anything if you aren’t having fun while you are doing it. Now, full disclosure, because that’s who I am …every time you are in the kitchen isn’t going to be sunshines and rainbows. Some times you will get frustrated (hello, not paying attention kid and now I have half a cup of sugar all over my counter and floor instead of the bowl). Sometimes you might loose your cool or honestly just not feel like having help at that moment (please go sit down and get your head out from my butt, am I right!?). But you have to make time to have fun. Whether it’s giving them a simple task or trying to let them do a whole recipe with little guidance, you have to bring fun into it. Dance around, sing, be happy, and appreciate these little people that are gaining valuable life skills from you that they will use the rest of their lives.

Now, let’s go have some fun! Grab your little, get in the kitchen.

Chocolate Nutty Apple Fluff

Ingredients
  • 3.4 oz package chocolate Instant pudding
  • 1/3 cup milk
  • 1/8 cup mini Chocolate chips
  • 1 heaping cup mini marshmallows
  • 1/2 cup chopped walnuts
  • 4 apples sweet, chopped finely
  • 2 cups homemade whipped topping
  • Additional chopped nuts and mini chips if desired for topping
Instructions
  1. In a bowl, mix together instant pudding and milk until well combined.
  2. Add in mini chips, marshmallows, walnuts, apples, and whipped topping.
  3. Stir until combined.
  4. Let set up in the fridge for at least 3 hours or overnight.
  5. Top with additional mini chips and nuts if desired.
  6. Serve.
  7. Keep leftovers in the fridge and eat within 72 hours.

How to Make Slime (Christmas Slime)

As a mom, I’m obsessed with anything that is going to keep at least one of my kids busy for an extended amount of time. Recently, the big one saw a video on YouTube kids where they were playing with slime.  She has relentlessly asked me for slime ever since. (yay).  I remember making slime in science class in grade school, so I knew it was something possible for us to do together. To make me even happier, it was ridiculously simple to make after a little tweaking.

As soon as we were done making it, she played with it for what seemed like forever. (PARENTING WIN). Not only that, but she has continued to ask to play with it every day since.  We’ve added some cookie cutters and various molds into the equation and insert endless fun.

On a side note….slime is actually an amazing stress reliever. It has been so much fun for me to play with as well. There’s something just so relaxing about doing things that make you relate to the fun times of your childhood. So go on, play with it alongside your littles! There’s no judging going on here. 🙂

Materials

  • Water
  • 2oz (half regular size bottle) of school glue
  • 1 tsp borax
  • food coloring

Directions

  • In one bowl, mix 1/4 cup water with glue and mix together until well combined.  Add 10 drops of desired food coloring.
  • In a separate bowl mix 1/4 cup water with borax until dissolved.
  • Slowly mix the glue mixture into the borax mixture.
  • Once both bowl are combined, mix really fast to make ingredients react creating slime.
  • Repeat directions for additional colors. We did red and green to make Christmas inspired slime.
  • Store slime in an air tight container in the fridge.

**Tip: for a goopy slime (like the green one in the video) add an additional 1/4 cup of water to the glue mixture bowl before combining with the borax mixture.
