Growing up, pizza wasn’t really a staple in our home. Curry, jerk, exotic to Americans fruit…those were the staples.  We didn’t have sausage and ham often, and homemade pizzas never happened. Rarely, we maybe had pizza take-out. Growing up Jamaican, we didn’t have a lot of traditional American foods. When I went away to college at West Virginia University, I didn’t have anyone to cook for me.  American styled foods were the norm. Between dorm food and fast food, it’s pretty much all I had.

College is also where I tried my first calzone.  It was great because I could walk and eat it without worrying about toppings falling off.  When I met Larisha and she knew how to make these from scratch, I didn’t believe her. Then, she showed me and we’ve made endless varieties since then.

Homemade calzones are great for breakfast, lunch, dinner, after school snack, and quick dinners on the road! You get the point. There’s really not a time that a calzone wouldn’t be good ever.

What is a calzone?

A calzone is pizza dough that has been folded over and baked after ingredients have been put inside of it. Typically, it’s filled with meat and cheese. Sauce is always served on the side of calzones and never inside of it.

These particular ham and sausage calzones are combined with peppers, garlic powder, and cheese. The flavor impact from these few ingredients is insanely delicious. It makes for an amazing recipe after Easter if you have leftover ham!

How do you make a calzone?

If you are wondering how to make a calzone, you’ve come to the right place.  The first step is to make homemade pizza dough or grab some store bought.  Separate it into equal pieces and then rolls into a ball.  Once you have balls, you want to roll them out into approximately 6″ circles.  Note: calzones can be any size but 6″ is the perfect handheld size for on the go. It’s vital that your dough is even and not thin in any one place or you risk your dough breaking.

Then, places your ingredients on one side of your circle. Afterwards, fold the empty side over and using a fork, seal the edges together.  Next, brush with butter and bake in an oven for 20-25 minutes. Serve alongside sauce.

Ingredients
  • 1 pizza dough
  • 3/4 lb Hatfield Sweet Italian Ground Sausage, cooked
  • 3/4 lb Hatfield Original uncured ham, diced
  • 1 cup bell peppers, mixed colors
  • 1/2 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp unsalted butter, melted
Instructions
  1. Preheat oven to 425 degrees. 

  2. In a bowl, combine sausage, ham, peppers, garlic powder, and pepper. 

  3. Separate pizza dough into 8 equal balls. 

  4. Roll out one ball into a 6" circle. 

  5. Place 1/8 of the mixture on one side of the circle. 

  6. Fold empty side over and using a fork seal the edges of the calzone. 

  7. Place on a baking sheet and repeat with remaining ingredients.

  8. Once all calzones have been made up, brush melted butter across all of them.

  9. Place in oven and cook for 20-25 minutes or until golden brown. 

  10. Remove from oven and let cool for 5 minutes before serving. 

  11. Serve alongside honey mustard bbq sauce.

Recipe Notes

Do not roll out more than one ball at a time or the dough will stick to the surface. Make one at a time.

Growing up, all our salsa came in a jar. It was always mild, even though everyone in the house that ate salsa, would have preferred a bit more heat. My mom thinks black pepper is too spicy, so nothing “too spicy” was ever allowed in our house.  True story: Whenever we went to a Mexican restaurant growing up, she ordered pizza and french fries off the kids menu because everything else was too spicy. ::insert eye roll::

It actually took me going to college before I would really be able to venture out on my own and try new things, flavor combinations, and ethnic cuisines.  I learned things I did and did not like during this time. Thankfully, all this prepared me for the wonderful and amazing dishes that I would become accustom to eating with Andrew’s family. Delicious recipes like jerk chicken, oxtail, and curry goat became the norm for me. One day Andrew’s mom made salmon with mango salsa. It was amazing. I couldn’t get enough of it. Since then, I’ve put mango on a ridiculous amount of things and every time I wonder why I don’t make it more often.

What Is Mango Salsa?

Mango Salsa is similar to a traditional easy salsa recipe, but swapping the tomatoes for mangoes.  In this fresh mango salsa recipe we combined diced mangoes, red onion, jalapeños, cilantro, red peppers, and lime juice. Move over Cool Whip. Learn how to make homemade whipped cream. This healthy alternative to the tub you are used to buying. You only need 3 ingredients for this tasty treat!

Growing up Cool Whip was one of my absolute most favorite things.  From the tub or can, I could literally shovel it in my mouth.  I would always drive my mom crazy because I would try to sneak spoonfuls out of the tub and she needed the whole container for whatever dessert she was making.  When our daughter was born though, we started watching what we were eating and I realized that I could be making my own homemade cool whip from scratch.  Not only was it healthier, but it actually tastes better, too.  Say WHAT!?

Is there a difference between cool whip and whipped cream?

Cool Whip is an artificial alternative for making whipped cream.  Whipped cream is the process of whisking or beating heavy cream until light and fluffy and sweetened with vanilla and sugar.

Some may ask, “why not just buy Cool Whip (or ReddiWhip can)?” That’s because the ingredients in Cool Whip tub contains the following: water, hydrogenated vegetable oil (coconut & palm kernel oils), high fructose corn syrup, corn syrup, skim milk, contains less than 2% of light cream, sodium caseinate, natural and artificial flavor, xanthan and guar gums, polysorbate 60, sorbitan monostearate, sodium polyphosphate, beta carotene (color). That’s more than 15 different ingredients! Half of which I have no clue what they are or how to even correctly pronounce them.  Why would you ever want to put that into your body?

Alternatively, the ingredients in homemade whipped cream are: heavy cream, vanilla, and sugar. That’s it.

How do you make whipped cream?

A homemade whipped cream recipe consists of whisking vigorously with a whisk or beating with a mixer heavy cream until light and fluffy clouds begin to form. Halfway through you add vanilla extract and white sugar. The end result tastes better than any store bought tub or can can compare. You do have to be careful that you don’t whisk or beat too long or you will end up making homemade butter.

Can I Make Homemade Whipped Cream In Advance? 

 Absolutely!  You can make homemade whipped cream up to 3 days in advance. Once it’s made, store in an air-tight container in your fridge until you are ready to use it.  Once ready, there may be some liquid at the bottom of your container.  Simply, whisk or beat the homemade whipped cream together again until reconstituted.

Ingredients
  • 1 cup Heavy Cream
  • 1 tablespoon Sugar
  • 1 teaspoon Vanilla Extract
Instructions
  1. In a chilled bowl of a stand mixer, add the heavy cream and begin to beat on medium speed. 

  2. Slowly add in the organic sugar and pure vanilla extract. 

  3. Continue to beat until stiff peaks begin to form. [This typically happens between 6-10 minutes, depending on your exact speed and the type of mixer you are using.] 

  4. Use immediately or place in refrigerator for up to 24 hours.

Recipe Notes
  1. Cold heavy cream and a chilled bowl work best and fastest for this recipe, but if you are in a pinch it will still turn out great if the bowl isn't chilled (the cream needs to be cold though)
  2. Stop once you have stiff peaks.  Over beating heavy cream will cause it to separate and form buttermilk and butter if beaten too long.
  3. You don't have to have a stand mixer, it's just what I have that works best.  A regular mixer, or even just a bowl and a whisk will work great.

Why in the world would someone want to make their own homemade taco seasoning? I mean really what is the point?  You can walk into pretty much any store that sells food and get a packet for under $1. Who needs to waste their time mixing together seasonings in their spice cabinets when they can just rip open the packet and pour into their skillet?

Did you know that the average taco seasoning packet has 12-15 ingredients and only one of them says spices? It’s true.  Most taco seasoning mix packets that you find in the store list “spices” for all the spices included. The remaining ingredients are preservatives, colorings, and more that simply aren’t needed. It’s actually insanely easy for you to make your own taco seasoning and you can double, triple…shoot, you can unvigintuple (that’s really a word – it means 21x) this recipe! We usually make 3-4 times the recipe and store it in an empty spice container and just use as needed.

What spices are in taco seasoning?

If you are wanting to know how to make taco seasoning, you need a few spices that you likely already have in your spice cabinet. The main spice in taco seasoning is chili powder. The other spices you will need are cumin, black pepper, paprika, garlic powder, onion powder, red pepper flakes, and Italian seasoning (or just oregano).

That’s it.  That’s literally all you need to make homemade taco meat seasoning or anything else that you make want to use a spice combination like this. We have used this DIY taco seasoning on hamburger meat, chicken, potatoes, scrambled eggs, stuffed peppers, and more. There’s so many ways beyond just tacos.

A few weeks back we made a Caramel Banana Ice Cream.  It was heaven.  H-E-A-V-E-N!

Problem – Ice cream actually takes a pretty long time to make.

While I prefer making as much as I can from scratch so I can control our ingredients, I really don’t like things that take a lot of time.  I mean, really, do any of us? There’s the whole instant gratification part of us, but also there’s the whole, I have a bajillion other things to be doing.  Waiting almost 24 hours for ice cream, isn’t really what I want to be doing.  And lastly, trying to explain to a toddler that we are making ice cream but it won’t be ready until tomorrow, is just setting yourself up for a huge meltdown.  And ain’t nobody got time for that.

I need something for those hot summer days that we come inside and can instantly have something within a few minutes to cool us off.  While we typically have ice pops on hand, sometimes we forget to make more before we run out. I mean I am human! HAHA.

What is Nicecream?

Nicecream is vegan ice cream made by blending up frozen bananas. Once you have the banana base, you can work on adding in toppings, sauces, and other ingredients to spin it into your favorite ice cream made from bananas.

Our favorite banana nice cream recipe is split between the one you are reading here and our Banana Swirl nice cream with strawberry sauce swirled into the nice cream recipe. Both of these healthy ice cream recipes are sure to please anyone!

What’s the best Nice Cream Recipe?

We almost always have frozen bananas in the freezer so it’s a quick and easy one to throw together. You can flavor the bananas with almost anything or just eat the whipped bananas by themselves.   • 4 Frozen Bananas
  • 2 tbsp Creamy Peanut Butter
  • 2 tbsp 100% Cacao Powder
Instructions
  1. Set Bananas out for 15 minutes to slightly thaw.

  2. Add ingredients to high powdered blender or food processor and blend for 5 minutes, scraping down as needed, until a thick, creamy consistency is achieved. 

  3. Serve immediately or store in air tight container in freezer. 

Recipe Notes

If you are having trouble blending completely, you can wait a few minutes for bananas to thaw a bit more or add a splash of milk (dairy or dairy free) until it will blend well.

Since having kids, our life has been all “semicrunchyish”. It’s where we are working to make small changes one at a time to live a better and healthier life. This lifestyle is also teaching our children to make healthier choices from the start. One easy swap we made was to stop deep frying things and using butter so often. When cooking chicken like in this chicken quinoa bowl, we use an oil, like Mazola® Corn Oil, for grilling indoors. You only need a small amount. Another easy swap came a few years ago when Larisha told me she was making quinoa for dinner. Keen-What? She was all, “Don’t worry, it’s fine.” Whenever she says that, I know to worry. Dinner is usually going to end up being eggs or a smoothie because she’s experimenting and well, I don’t like experiments. Surprisingly, this “keen-wha” turned out delicious.

We’ve been eating quinoa for awhile now since then and we actually prefer it to other starches. It was one of the first changes that we made to living a less indulgent life and it’s completely stuck with us. What we’ve found works best is to make small changes and swaps one by one instead of drastic shifts. This helps to get used to things gradually instead of suddenly so much and it becoming overwhelming.

How Long Does It Take To Cook Quinoa?

One of the reasons we love this chicken quinoa bowl we’re sharing with you today is because you can cook it fast. Traditionally, rice takes upwards of 40 minutes. However, quinoa can be ready in as little as 15 minutes. You always want to rinse quinoa to remove the coating. The coating can make quinoa taste soapy or sometimes bitter depending on your taste buds and no one wants that. Then, you have two options:

  1. Add 1 cup rinsed quinoa to 2 cups water. Bring to a boil. Cover and reduce heat to simmer. Then, let cook for 15-20 minutes (until no liquid is remaining).
  2. Our preferred method is to toast the quinoa and add some flavor. Using a bit of oil, like Mazola Corn Oil, sauté onions and garlic for 2 minutes. This recipe is a great way to make a better-for-you dish this New Year. Perfectly cooked quinoa is topped with chicken seasoned and grilled in corn oil. Paired alongside are black beans, your favorite fresh slaw recipe, corn salsa, avocado, and cilantro. To top it off, a few fresh squeezes of lime juice to have the absolutely perfect dish. Quinoa boosts higher dietary fiber and protein than white or brown rice making it healthier for you. Using a low-sodium chicken broth to cook the quinoa adds in flavor with the added salt content.   Additionally, cooking the chicken in a bit of corn oil versus butter or another fat and grilling instead of frying yields a healthier meal all around.

Ingredients
  • 2 tbsp Mazola® Corn Oil divided
  • 1/2 cup sweet onion chopped
  • 2 cloves garlic minced
  • 1 cup quinoa rinsed
  • 2 cups low-sodium chicken broth
  • 1 lb chicken breasts cubed or small slices
  • 1 tbsp chicken rub seasoning
  • Optional Toppings: corn salsa fresh slaw, avocado slices, black beans, chopped red pepper, chopped tomatoes, cilantro, lime wedges, corn vinaigrette or dressing
Instructions
  1. In a sauce pan, add 1 tbsp corn oil on medium heat.
  2. Add in the onion and garlic and saute for 2 minutes.
  3. Add in the rinsed quinoa and stir constantly to toast for 2 more minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add lid and reduce heat to simmer for 15-20 minutes until no cooking liquid remains.
  6. While quinoa is cooking, season cut chicken breasts with chicken rub seasoning.
  7. In a grill pan, heat remaining tbsp of corn oil on medium heat.
  8. Add chicken and cook for 8-10 minutes or until chicken has reached an internal temperature of 165.
To Assemble Your Chicken Quinoa Bowl
  1. First layer quinoa on the bottom of your bowl.
  2. Then, add your chicken.
  3. Next, add your desired toppings. In the photos shown, we used a fresh broccoli slaw, corn salsa, black beans, cilantro, avocado slices, and topped with lime juice and a sweet corn vinaigrette.

If you know me, even in the slightest little bit, you know that I am one doughnut-obsessed loving person. While I’ve always been in love with them, I can’t really say my true doughnut obsession started until I bit down in a local bakery’s ultra-creme-filled version and then again with local Amish doughnuts. Quite honestly, there’s nothing like an Amish doughnut and if you’ve never had one, make it a bucket list goal.

Since then, there’s been no looking back. The way to my heart is officially through doughnuts. I didn’t learn about either of these options until after I had our oldest. When I was pregnant with our baby, I remembered that I had to be dairy free from 6 months with our oldest because she was essentially lactose intolerant. I wanted a doughnut recipe option when I had the baby in case they same happened (it did). Thus, this dairy free donuts recipe love child was created.

How do you make doughnuts at home?

The best dough for homemade doughnuts recipe is a yeast dough. Once you have that you knead the dough and let rise twice. After that, you want to roll out and cut your dough. Finally, you fry the dough for 2 minutes on each side. The most amazing thing about doughnut recipes is that once you have the dough fried, your possibilities on the toppings for donuts are endless.  Sprinkles, glaze, chocolate sauce, cinnamon sugar, powdered sugar, and more.

How do you make dairy free doughnuts?

In most homemade doughnuts recipe, milk and butter are used in the recipe.  Obviously, dairy is a large allergy for money, so we wanted to make a dairy free doughnut recipe. It was incredibly easy to swap out dairy in the doughnut recipe.  You can swap coconut, almond, or soy milk for the regular milk in this donut recipe. For the butter, we swapped with coconut butter. The end result was delicious.

Our older daughter, took a bite into one and said, “Mmm, it’s Schurmmy”. That’s her saying “It’s so yummy.”  So that’s a win/win in my book.  We will definitely be making these doughnuts again and again.

Ingredients
  • 1 1/2 cups dairy-free milk alternative coconut, almond, or soy milk, scalded
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 1/2 cup coconut butter
  • 1 1/2 cup warm water
  • 4 1/2 tsp active-dry yeast
  • 3 eggs beaten
  • 7 1/2 cups bread flour
  • Optional: powdered sugar, cinnamon sugar, dairy free glaze, jelly, etc
  • Vegetable Oil for frying
Instructions
  1. To your scalded milk, add sugar, salt, and coconut butter. Stir until butter is melted.
  2. Set aside and let cool for 10 minutes.
  3. After 10 minutes, in a small bowl, add warm water and yeast. Let sit for 5 minutes.
  4. In a large bowl, add the eggs and 1/4 of the flour and slightly combine.
  5. Add in the milk mixture and another 1/4 of the flour. Combine again.
  6. Add in the yeast mixture and another 1/4 of the flour. Combine again.
  7. Add remaining flour and combine lightly.
  8. Transfer dough mixture to a lightly floured surface and knead for 5 minutes.
  9. Place dough in a bowl and cover with a large kitchen cloth.
  10. Let dough rise for one hour.
  11. Remove and knead for another 3 minutes.
  12. Place back in bowl and let rise for another hour.
  13. Punch down and roll to 1/2 inch and cut. (See Notes if you don't have a doughnut cutter)
  14. Let rise for 20 minutes.
  15. While waiting, bring your oil to 300 degrees.
  16. Once your oil has reached 300 degrees, Cook your doughnuts on each side for 2 minutes.
  17. Remove onto a paper towel lined plate to absorb excess grease.
  18. Let cool enough to touch, then add powdered sugar or glaze on top!
For homemade dairy free glaze:
  1. Whisk together 1 cup powdered sugar, 2 tbsp dairy-free milk alternative of choice, and 1 tsp vanilla extract.
Recipe Notes
  1. Nutritional facts calculated using almond milk. Optional toppings and fillings not calculated in nutritional facts.
  2. If you do not have a doughnut cutter, you can use a 3" biscuit cutter and then the large end of a pastry tip to cut out the hole.
  3. For Doughnut Holes Using a small ice cream/cookie scoop, remove a tablespoon of dough at a time. Cook for 30 seconds on each side, then remove to paper towel lined sheet.
  4. For Filled Doughnuts Do not cut center out of dough. Use a biscuit cutter. Cook as normally described above. Once removed pipe choice of ingredient into center.

Turkey Cheese Apple Sandwiches are your kids next favorite lunchbox idea.  By now they are tired of everything you’ve been offering them all year.  They got a winter break and then you likely were right back to the same ideas. They’ve only been back for a few weeks this year and they are already complaining.

Not only are these unique and you likely haven’t tried them yet, but there are endless possibilities.  While we focus on Turkey Cheese Apple Sandwiches here, you could easily recreate with ham, chicken, roast beef or another meat. You can switch up the cheese you use too!  Turkey goes great with a mild cheddar, but with chicken and gouda apple slice sandwich would be amazing.

We used Lil Snappers Pink Lady apples.  Not only are pink lady apples crisp and sweet, but Lil Snappers are made specifically for kids for their small size. Toss an apple into their lunchbox for school, and then use them again in this recipe for an after-school snack. Or reverse it and use these in their lunch box and through them an apple and peanut butter or hummus for that after-school snack. Lil Snappers also makes pears and oranges in kid-sized portions. They still meet one size serving of fruit for your family’s daily requirements.

Can you make Apple Slice Sandwiches ahead of time?

Absolutely!  The key to making these ahead of time is that you rub each side of the apple slices with lemon juice.  The acidity in the lemon prevents apples from browning.  You can make these these at least 12 hours in advance without worry. Beyond that, you want to ensure that you are using a very crisp apple like Lil Snappers Pink Lady apples. Using a softer apple, it will start to turn mushy after 12 hours. Pink Lady apples can be made 24 hours in advance.

These apple slice sandwiches are great for after school snacks or for the lunchbox.

Baked Apples are such a fun dessert.  It’s the perfect amount of heightened sweetness from the caramelizing that happens during the baking process. To make it even more fun and kid-friendly, we combined cheesecake filling, a caramel apple sauce, and crumb topping to make the most indulgently delicious, Caramel Apple Cheesecake Baked Apples. Let me say that again in case you didn’t have a chance to really comprehend.

They are really as amazing at they sound too.  Listen, if you know our family, you know that Andrew is really picky.  While he loves apples, he’s not a fan at all of cooked fruit. Yall…he loveeedddd this. Better yet though, the kids loved it. We used pink lady apples for this recipe because they are crisp and sweet. However, feel free to use the variety of apples that you love the most.

How long does it take to bake an apple in the oven?

Typically, the average sized apple may need 30-40 minutes to bake apples in the oven. If you use smaller apples they can be ready 20-25 minutes. Obviously, if you use very large apples, you are going to need to let them cook longer. You want the outside of the apples to start to wilt and focus on the topping getting golden brown.

How do you make Healthy Baked Apples?

If you are looking for a healthier alternative to this recipe for your littles, you can simply cook the cored apple pieces with some coconut oil, apple pie spice, and chopped nuts of your choice and then fill the apples. Bake the same amount of time.

Ingredients
  • 6 sweet apples (we like pink lady)
  • lemon juice
  • 1/2 cup flour
  • 1 stick unsalted butter, softened and divided
  • 1/8 cup brown sugar, packed
  • 8 oz cream cheese, softened
  • 1/4 tsp vanilla
  • Caramel Apple Sauce
Instructions
  1. In a small bowl, using a pastry knife (or your hands), combine flour, 1/2 stick butter, and brown sugar. 

  2. Work mixture until course crumbles are formed. Set aside. 

  3. In a medium bowl, Beat together remaining butter, cream cheese, and vanilla. 

  4. Carefully scoop out the insides to the apple, not going too close to the bottom. Remove any seeds. 

  5. Brush insides of apple with lemon juice to prevent browning. 

  6. Make Caramel Apple Sauce according to instructions and also adding in the insides of the apples. Proceed making recipe as normal. 

  7. Preheat oven to 350 degrees F. 

  8. Inside the apples, add a small scoop of cheesecake mixture. 

  9. Then, layer, a small scoop of caramel apple sauce, another small scoop of cheesecake mixture. And then top with scoop of streusel topping.  

  10. Place apple in a large muffin tin so apples don't roll around. 

  11. Repeat with remaining apples.

  12. Bake for 20-25 minutes or until apples appear to be slightly wilted. 

  13. Serve alongside remaining caramel apple sauce.

Craving both cake and cookies, but don’t want to compromise? These Double Chocolate Cake Cookies are the perfect combination to satisfy both cravings.

For years, I wasn’t a huge chocolate fan.  It’s true. I would eat brownies, but chocolate chip cookies or chocolate cake, it wasn’t for me. When Andrew and I got together, he desperately tried to change my mind. See, he lovesssss chocolate.  If he’s in a bad mood, chocolate can usually fix that. I love putting a piece of chocolate in his lunch box when I know he’s having a rough start to the day.  It’s the little things that really matter.

Thankfully, his love of chocolate taught me to appreciate it more. Now, I still don’t have a love obsession with chocolate cake, but cookies, brownies, and other desserts, I’m all in for all the chocolate.

Every Saturday, we make a different cookie for our in-home date night.  It’s something we’ve done for a little over a year now and it’s something we both look forward to at the end of every week. One night, Andrew was in charge of the recipe and he said he was making chocolate cake cookies.  I was so upset.

Ingredients
  • ½ cup unsweetened dark cocoa powder
  • 1 cup cake flour
  • 1½ cup flour
  • 1 teaspoon arrowroot powder cornstarch could be used as a substitute
  • ¾ teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter 2 sticks, cold, cut into pats
  • 1 cup brown sugar packed
  • ½ cup white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 1/2 cups chocolate chips milk chocolate used in these photos; however, we've done white, semi-sweet, peanut butter chips, or a combination of a variety of these as well.
Instructions
  1. Preheat oven on 410 degrees F.
  2. In a medium bowl, whisk together cocoa powder, both flours, arrowroot powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugars.
  4. Beat in eggs 1 at a time just until mixed in.
  5. Add vanilla and mix just until blended.
  6. Add all dry ingredient mixture and stop as soon as it's combined.
  7. Fold in chocolate chips.
  8. Line baking sheet with parchment paper.
  9. Roll mixture into 12 large balls.
  10. Cook for 8-12 minutes or until set.
  11. Remove and let cool for 5 minutes.
  12. Serve immediately or store in an air-tight container for up to 7 days.
